Smoked Salmon, Walnut and Avocado salad

This delicious smoked salmon salad is so simple to prepare and has a combination of healthy, mood elevating whole food flavours to satisfy and leave you feeling great.  Grain free, gluten, dairy and fructose free.

Each and every ingredient contributes vitamins, minerals, proteins and good oils that support optimal brain and neurological functioning.  All in a flavour combination, that tastes delicious!

Serves 2-4

Ingredients
Large salad bowl or platter of mixed leaves (I like rocket and baby spinach, but any kind will do)
1 large avocado, halved, peeled and cubed
200gram piece (approx) of smoked salmon (I use a whole fillet of hot smoked salmon from my local market, broken up into chunks but you can use the sliced version if you like)
5-6 cherry tomatoes halved
½ cup walnuts lightly toasted
1 red onion, halved and sliced thinly
2 tablespoons of capers, drained
 
Dressing
1 medium sized lemon, zest, and juice
¼ cup extra virgin olive oil *
1 teaspoon of horseradish cream
Sea salt, a good pinch
Black pepper, to taste
*Note: As the amount of juice from a lemon varies, you should aim to have roughly the same amount or slightly more olive oil than the juice. Taste and adjust accordingly.

Method

  1. Place the leaves into a bowl or onto a platter.  Arrange all of the other ingredients on top.
  2. For the dressing place, all of the ingredients into a jar and shake until combined or mix together well in a small bowl.
  3. Drizzle over the salad, just before serving.

 

Variations
Dairy free
Replace the horseradish cream with fresh horseradish or dijon mustard.

Nut free
Replace the walnuts with toasted pumpkin or sunflower seeds.

Vegan or vegetarian
Replace the salmon with diced and grilled tempeh or grilled mushrooms.

Make it more substantial
Add boiled and diced potato or  roasted sweet potato.  A slice of rye or sprouted sourdough is also delicious.

    Oooooohh this looks delicious! I think using Dijon mustard would be a yummy alternative, I’m not a fan of horseradish cream!
