This is such a yummy, old-fashioned style Chocolate Slice – it reminds me a lot of the one my nan always made me, only a little healthier. This Healthy Chocolate Coconut Slice is a lovely chocolatey treat to stock your freezer with, so if you have hungry kids at home looking for a snack or need an easy lunchbox filler, you’ll have this on hand ready to go!
Food memories are the best. As a kid I used to bake with my nan every weekend, we even occasionally ‘invented’ recipes. The ones that worked out, she carefully wrote on a note pad and sticky taped it into her recipe notebook. I still have that notebook, though the tape is browned and dried and the binding has seen better days.
Anyway, enough nostalgia…though I do hope that one of my recipes will perhaps form memories and be carried down in your family.
Health benefits
This healthy chocolate coconut slice is made with wholemeal spelt flour, rolled oats, and desiccated coconut, this slice provides fibre and slow-releasing energy. The cacao powder is rich in antioxidants, while the choice of natural sweeteners like honey or rice malt syrup makes it a healthier alternative to refined sugar treats.
Ingredients
This recipe uses spelt flour, oats, cacao powder, and coconut. Butter or coconut oil adds richness, and the bittersweet chocolate icing made with raw cacao powder (or cocoa powder), rice malt syrup or honey, milk and coconut oil brings a decadent touch that can be adjusted to suit your taste.
How to make this healthy chocolate coconut slice
Melt the butter or coconut oil, stir in the sweetener, and mix with the dry ingredients until combined. Press the mixture into a tin lined with baking paper and bake in a fan-forced oven as instructed below. Chill before adding the rich bittersweet chocolate icing made with cacao powder, rice malt syrup or honey, milk and coconut oil and sprinkle with coconut for a beautiful finish. This can also be made in your food processor and we’ve included the Thermomix method too if you have one.
Serving suggestions and how to store
Enjoy this slice as a mid-morning snack or a healthier dessert option. It’s also perfect for school lunchboxes being nut-free and egg-free. Store in an airtight container in the fridge to keep it fresh for up to a week or freeze it for longer storage. It can be packed or eaten from frozen. Refrigerating before slicing ensures clean, crumb-free cuts.
Vary this healthy chocolate coconut slice to suit
For a gluten-free option, swap spelt flour for your favourite gluten-free flour and replace oats with quinoa flakes. Make it dairy-free or vegan by using coconut oil instead of butter. Choose brown rice syrup for a low-fructose version.

Ingredients
- 150 g butter or coconut oil
- 85 g rice malt syrup, honey or maple syrup (¼ cup approx.)
- 30 g cacao powder - unsweetened Dutch process or raw
- 120 g wholemeal spelt flour (1 cup)
- 90 g rolled oats (1 cup)
- 100 g desiccated coconut (1 cup)
Bittersweet Chocolate Icing (see note below)
- 30 g cacao powder - unsweetened Dutch process or raw (¼ cup)
- 2 tbsp coconut oil
- 2 tbsp rice malt syrup or honey
- 1 tbsp milk (of choice)
- 10 g desiccated coconut (2 tbsp)
Method
- Preheat your oven to 180°C/350°F (fan-forced).
- In a large pot over medium heat, melt your butter (or coconut oil). If using a Thermomix 90, 1 minute, speed 3.
- Turn off the heat and add the sweetener, mixing to combine. If using a Thermomix 30 seconds, temp 90, speed 4.
- Add all of the other ingredients and mix well until combined. If using a Thermomix reverse speed, 30 seconds.
- Press firmly into a lined tin (approx. 17 x 27cm) and bake for 10-12 minutes. Take care not to overcook this as it can dry out. If your oven runs hot, reduce the temperature to 160°C.
- Once cooled, pop it into the fridge to chill for 30 minutes or more.
Bittersweet Chocolate Icing
- Make the icing by beating all of the ingredients together in a small bowl until smooth and creamy. If using a Thermomix butterfly, 1 minute, speed 3.
- Spread over the chilled slice and sprinkle over a little extra desiccated (or shredded) coconut.
- Chill for 10 more minutes in the freezer, remove from the tin and carefully slice into squares by pressing straight down with a large sharp knife.
Store
- Store in the fridge or freeze in an airtight container.
Note
- The icing above is very rich (for dark chocolate lovers only). You can leave it off, top it with melted chocolate or a chocolate butter cream. This recipe works really well as a super healthy ganache too.
- Refrigerating before slicing makes it much easier to cut without crumbling.

What a lovely slice, Georgia! It was enjoyed by all for afternoon tea today. Quite rich, so I cut the slice into small squares. I’ll definitely be making this one again, maybe for variety I’ll add some finely chopped up walnuts to the base next time. Thank you for sharing and Happy New Year to you & your family. xx
Georgia Harding says
So glad you enjoyed it Gina. It is rich (especially with the bittersweet icing), the walnuts would be a great addition too I think. Thanks for your feedback and the 5?s too G x

Jodi says
Loved this chocolate slice, so happy to have something on the heathy side to reach for when my sweet tooth hits. I did swap Cocoa for the Cacao in the icing and that obviously gave it a more sweeter taste which I preferred but I did also try just the base and would be happy to just eat that as well.
Georgia Harding says
So glad you enjoyed it Jodi G x
Fiona says
Love this! I have made it twice now. Will be become a family regular. I use rice malt syrup for the base and the icing is divine! Thanks Georgia. I’ve made three of your recipes today. All great 🙂

Debbie Harris says
I love this slice, however the kids are finding it a bit bitter (it is currently un-iced as I heeded the warning on the bittersweet chocolate icing). I have done a search for a chocolate buttercream instead, as suggested, however I can’t seem to find anything. Please can you point me in the direction of a sweeter icing that might mask the bitterness for the kids.
Georgia Harding says
Yes, you could combine –
70 g butter – at room temperature (important it’s not over softened or too cold)
3 tbsp rice malt syrup or honey (more or less to taste)
3 tbsp tapioca flour – or arrowroot
2 tbsp cacao
Hope that helps. Next time you could add extra sugar to the slice to offset the cacao (or use less cacao is another option) G x
Debbie Harris says
Thank you so much! Will give this a try today, so it is ready for an afternoon snack after school 🙂
Tara says
So mine ended up quite dry and crumbly. I used coconut oil instead of butter. Do you think this is the reason why?
Georgia Harding says
Strange. It sounds like it has been overcooked perhaps or an ingredient mistake perhaps. Coconut oil toughens and tightens as it cools which is nice to produce a crisp slice (but not dry). You could perhaps crumble it over yoghurt to re-invent it? G x
Katie Jodrell says
This is an absolute winner!!! So easy and so delicious. My kids have been loving it as a little sweet treat!
Georgia Harding says
Ah brilliant, it’s a great easy to make snack for sure G x
Emma says
I’m not sure if my scales are way out, but 45g of oats only seemed to be about half a cup, if that? Not sure if I should be going off the cup measurements or the weight… I ended up adding a heap more oats because it was super wet.
Not sure how it turned out as it’s still cooking… but just wanted to check on that oats quantity because I feel like either it’s wrong, or my kitchen scales are gaslighting me! 🙂 please help 🙂 🙂
Georgia Harding says
Hey Emma, I hope it was okay. This recipe was remove by accident just before you accessed it and in re-entering the ingredients the grams were in error (cups were right). We noticed it when the proofer checked it but it was live for a while, sorry, this has never happened before. It’s all good now though G x
Emma says
No problem – I’m just glad I’m not crazy 🙂
And it turned out pretty good anyway, even though I winged it on the oats in the end. Yum!
Angela says
I don’t have a thermomix, any suggestions on how to modify the method? ?
Georgia Harding says
All of my recipes have the regular method, the first half of each step is the regular method eg; melt the butter in a pot, add the sweetener and the dry ingredients and mix together. Hope that clarifies G x
Anna says
This slice is so yummy and so very easy, what a winner. I used Georgia’s tapioca icing with 10g coconut added and it turned out really delicious.
Thanks for transforming my life with all your amazing recipes Georgia.
Georgia Harding says
Ah thank you so much Anna, I’m thrilled to be able to support your cooking G x
Phyllis says
What can I substitute whole meal spelt flour?
Georgia Harding says
Either a regular wholemeal flour or a mix of almond meal and buckwheat flour. It’s very versatile Phyllis
Alison Donpon says
Love this slice. I like to make it for school lunches and keeps well in the freezer. Yummy!
Georgia Harding says
Yes, its great to make along side the Lemon Slice too G x

Lee-Ann Crooks says
Oh I just used rice instead of coconut…. I can’t bear to waste this.. will try to add some liquid and bake it… how annoying! Except for the horrid crunch, the raw batter tastes amazing!!! 😂
Well Nourished Team says
Hi Lee-Ann hopefully the end result was ok! What a save ☺️
Aimee says
Hi could I use almond meal instead of wholemeal spelt?
And use gluten free oats to name it gluten free ?
I was thinking of turning it into little tarts and putting some chov
Chocolate and orange in it ?
Well Nourished Team says
Hi Aimee, yes you can use almond meal instead although it wont be as firm/crisp. The choc-orange variation sounds good let us know how it goes!
Diane Toomey says
Hi Guys! I’m wondering whether you have nutritional information for your recipes and how I could access it? They all look amazing and I’m keen to get cooking!! Thanks, Diane 🙂
Nicole says
Could I leave out the oats, don’t have any nor quinoa flakes. If so would I need more flour? Thank you.
Well Nourished Team says
Hi Nicole, we haven’t tested this but you would need to substitute with the same volume of flour.
Carmel says
Such a great recipe. Just the right amount of sweetness and very satisfying.
Well Nourished Team says
