This Banana Rhubarb Raspberry Slice not only looks amazing, it tastes sensational. The sweetness of the ripe bananas paired with the tartness of the rhubarb really is a match made in heaven.
My kids are both back at school as of today and seeing as this Banana Rhubarb Raspberry Slice is their current favourite snack, it’s only fitting that I share it here in the membership. I can’t wait to hear how you love this, I hope it will be added to your planner and become your family’s new favourite too. Feel free to experiment with other fruits for the topping or if you prefer, you could just make the banana cake part.
Health benefits
This slice is packed with fibre from the bananas, wholemeal spelt flour, and raspberries, supporting digestive health. The rhubarb contributes calcium and vitamin K, while the bananas provide potassium for heart health. With minimal added sugar, this slice is a wholesome alternative to traditional sweet treats.
Ingredients
How to make this banana rhubarb raspberry slice
This banana bread begins with blending the wet ingredients, including mashed bananas, eggs, butter, vanilla extract and milk, into a smooth mixture. Dry ingredients such as wholemeal spelt flour, bicarb, and cinnamon are folded into the wet mix, creating a light batter. The batter is poured into a prepared slice tin and topped with thin slices of rhubarb and raspberries. Bake until the centre is set and golden brown.
Serving suggestions and how to store
Serve this slice warm as a comforting snack or dessert with a dollop of Greek yogurt or coconut yogurt. It also pairs well with a hot cup of tea. Store leftovers in an airtight container in the fridge for up to a week or freeze individual portions for convenience.
Vary banana rhubarb raspberry slice to suit
For a dairy-free version, swap butter with coconut oil or macadamia nut oil. Use your preferred gluten-free flour blend to make it gluten-free. To replace eggs, try chia eggs for a plant-based alternative. Feel free to experiment with different seasonal fruits like blueberries, apples, or pears for variety. For a protein boost, mix in nuts or seeds, or sprinkle them on top before baking.
Tip
Ensure the bananas are very ripe, as their natural sweetness is key to the flavour of this slice, with minimal added sugar used.

This was super easy to make! Love that it’s adaptable for different fruits. Mine wasn’t very sweet but I think it’s just us needing to reduce our sugar intake. Fluffy texture, substantial but not too dense.
Georgia Harding says
Hey Kristy, yes it is low sugar, and the ripeness of the bananas really dictates how sweet it turns out. Next time add in extra sugar if you like G x
Karla says
Can’t wait to make it, looks so yummy! Just wondering can it be frozen? There’s only 3 of us so I don’t want to wast it. Thanks
Georgia Harding says
Yes definitely can freeze it in an airtight container G x
Karla says
Thank you!
Jemma says
Hi Georgia, the link to the GF flour pre-mix is missing. I’d love to know which one you use…many thanks!
Georgia Harding says
Oops sorry – forgot to link it. There now Jemma G x

Thanks Emily and cheers for the 5?s x
Deborah Slater says
I would like to make this with figs in place of the rhubarb and raspberries and was wondering what sweetener I could use in place of the banana? Or should I still go with the banana? Thank you. Loving ALL the new recipes and the meal planner. x
Georgia Harding says
Hi Deborah, that sounds lovely. I would still use banana though as it add structure to the cake G x
Demelza Carter says
My whole family LOVE this recipe. I’ve never cooked with rhubarb before and this was beautiful.
Georgia Harding says
Ah fabulous Demelza, so glad you all enjoyed it G x
Merry says
Could you use sunflower oil in place of the coconut oil? And maple syrup in place of the coconut sugar? Thank you 🙂
Georgia Harding says
Hi Merry, yes both should be fine G x
Kate Topalovic says
Made a gluten free version of this and it was delicious! Beautiful texture and flavour. Used a mixture of (rice flour, potato starch and tapioca starch) to replace spelt flour.
Georgia Harding says
Oh fabulous and thanks for sharing your version Kate G x
Angela Jordan says
Hi Georgia
I’ve made this several times now with a premix gf flour. What mix of flours though could I use to make my own gf flour? Do you have a favourite gf flour recipe?
Georgia Harding says
Hi Angela, for cakes or slices like this I often mix almond meal and buckwheat or rice flour (50:50). So glad you enjoyed it G x
Tracy says
Hi Georgia,
Would this work with a 50:50 almond and buckwheat mix? We don’t use premixed gf as we can’t consume rice flour.
Thanks,
Tracy
Georgia Harding says
Yes, definitely Tracy G x
Wendy Rose says
Having made so much banana loaf, I was looking for an alternative to use up some frozen rhubarb. So easy & delicious with the raspberries, couldn’t believe how sweet it tastes even with the lack of sugar, amazing & light.
Georgia Harding says
So glad you enjoyed it Wendy, thanks for your feedback G x
Georgina Trickett says
Hi Georgia – thank you so much for this wonderful recipe – I baked it for the first time yesterday and it was eaten so quickly I had to make another batch today! Because of gluten and egg intolerances (and nut allergies) I substituted spelt for a non-almond GF flour mix (buckwheat, brown rice flour, tapioca) and the 2 eggs for 2 flax eggs. Doing both substitutions didn’t negatively impact the recipe at all. Absolutely delicious! Will be on high afternoon tea rotation in this house from now on.
Georgia Harding says
So glad it adapted well Georgina, cheers for the 5 stars too G x
Annabel says
I made this recipe with chia seed as egg replacer and macadamia oil. It was good but had a very bicarbonate of soda taste. I couldn’t work out what is the acid in this recipe to activate the soda. Do I need to add something else?
Georgia Harding says
I find bicarb taste’s strong as it starts to go off. Make sure you store it airtight (fridge or freezer will extend the shelf life).
Emma says
This was so good and very easy to make. Didn’t have raspberries so used some sad strawberries instead. Have two stems of rhubarb left so may need to make another one!
Well Nourished Team says
That does sound delicious Emma! So glad you enjoyed it.

Loved this!
I baked this for myself and friend as a snack for a fun beach day trip and it was a hit!
I was a bit naughty though. I forgot to buy some rhubarb so I added white chocolate chips instead. It was soo good!
Well Nourished Team says
So glad you loved it! That white chocolate addition would have been so good!
Elena says
Hello, sorry to be a pain. I just wondered what size a ‘slice tin’ is in your recipes. The Anzac slice mentions a ‘small slice tin’ and says it’s 30cm x 20cm. Is this the size of tin for all your slice recipes?
Many thanks!
Well Nourished Team says
Hi Elena, yes that is correct approximately 20 x 30 cm will work!
Elena says
Thank you very much! I’ve just ordered a 30×20 tin, can’t wait to use it!
Elle says
Our favourite way to use up brown bananas – there are many, but this is the winner by a smidge! Have made many times with rhubarb and not, with all manner of berries and even other fruit. Occasionally as a quick brekkie with a smoothie, often in lunchboxes (fresh or outta the freezer), rarely gets packed away without a couple of pieces eaten fresh from the oven (with or without yogurt/cream). Yup, we’re fans 😀
Kathryn Hood says
Hello!
I would love to make this and just want to confirm that the rhubarb and raspberries don’t go into the slice at all? Just on top? Do you pre-cook the rhubarb or just place it on top? I’m inclined to want to add both fruits to the overall mixture but I’m not sure if that’s wrong? Thanks!
Well Nourished Team says
Hi Kathryn
Yes just top the slice with finely sliced rhubarb and raspberries, no need to mix through. If you have a quick look at the video just below the recipe it will give you a visual aspect of the steps. Enjoy
Rachel says
Could you mix the rhubarb I. The batter and just top with raspberries ?
