This sticky mince nourish bowl is one of those meals that proves eating well doesn’t need to be complicated. Ready in under 30 minutes, it’s a nourishing mix of savoury-sweet beef mince, fresh herbs, crisp veggies and a little tang from kimchi or pickled onion. It’s perfect for busy weeknights, meal-prep lunches or those evenings when you want something wholesome and deeply satisfying without spending hours in the kitchen.
Health benefits
This bowl is rich in both protein and fibre, making it a well-balanced meal to keep you full and energised. With around 35g protein per serve, thanks to the beef and tamari, it supports muscle repair, stable energy and satiety. The peas, capsicum, leafy greens and fresh coriander contribute 7g fibre per serve, which is essential for gut health, hormone balance and steady digestion. As a complete meal, it offers a mix of macronutrients and micronutrients that help you feel nourished and grounded.
Ingredients
The beauty of this sticky mince nourish bowl is in its simplicity. It combines beef mince with garlic, ginger, tamari and coconut sugar to create a sticky, caramelised protein base. Fresh peas, capsicum, coriander, leafy greens and kimchi (or red onion pickle) provide colour, crunch and a burst of freshness. Lemon or lime ties it all together with brightness, while olive oil brings healthy fats.
How to make this Sticky Mince Nourish Bowl
To make this meal, start by heating a pan with olive oil and sautéing the beef, garlic and ginger until cooked through. Once the pan is dry, add the tamari and coconut sugar, increasing the heat so the mince caramelises into a sticky, golden mix. Toss through the peas right at the end for a pop of colour and sweetness. While the mince cooks, prep the coriander, capsicum and greens so everything is ready to assemble. Serve in bowls with your chosen fermented topping and a wedge of lemon or lime to squeeze over just before eating.
Serving suggestions and how to store
Serve the sticky mince nourish bowl as is for a light but filling dinner, or make it heartier by pairing it with steamed rice or quinoa. It also works beautifully as a warm salad with wilted greens, or you can pack it into meal-prep containers for quick lunches through the week. The cooked mince can be stored in an airtight container in the fridge for three days or frozen in portions, while the fresh vegetables and herbs are best stored separately and added fresh at serving.
Vary this Sticky Mince Nourish Bowl to suit your dietary needs
If you’d like a soy-free version, simply replace tamari with coconut aminos and adjust the seasoning. For a plant-based take, swap the beef for crumbled tempeh or cooked lentils, which still pair beautifully with the sticky marinade. To make it go further, serve over rice, or bulk up the fibre with extra beans or lentils stirred through.
