This Salmon Vegetable Curry is a quick, easy to make delicious meal that even my fish-fussy kids adore. My daughter has become progressively fish fussy as she’s got older. Where she would happily eat all seafood, including slurping back a slimy oyster as a toddler, she now balks at a plain piece of grilled fish. It’s funny because I remember disliking anything fishy as a teenager too, so I can kind of sympathise.
But instead of no longer serving fish to cater to her fussiness, we’ve worked together to find ways of serving it that she enjoys, and this light Salmon Curry is now my whole families favourite way to eat fish. You can certainly make it with any firm white fish, however there’s something about the oiliness of the salmon that sits particularly well with the spices in this mild curry sauce.
It literally takes 15 minutes to prepare and cook so it’s a win win all round.

Other variations

- 1 tbsp butter, ghee or coconut oil
- 1 onion/s (small) peeled and diced
- 2 clove/s garlic - crushed
- 1 tbsp ginger root - minced (on a microplane)
- 2 roma tomatoe/s - diced
- 1 tsp ground cumin
- ยฝ tsp ground coriander
- ยฝ tsp ground turmeric
- ยฝ tsp ground black pepper
- chilli flakes - to taste
- ยฝ tsp sea salt - or to taste
- 400 ml canned coconut milk
- 500 g salmon filllet -skinless and cut into 2cm cubes (approx.)
- 1 red capsicum/s - sliced
- 100 g green beans - trimmed and halved
- 1 head/s broccoli - broken into small florets
- ยฝ bunch/s fresh coriander leaves - chopped, to serve
Serve
- Rice, quinoa or cauliflower rice (to serve)
- 1 lime (juice to serve)
Instructions
- In a pan over medium heat, heat the butter, ghee or olive oil. Add onions, garlic, ginger and cook until starting to soften but not brown.
- Add tomatoes, cumin, coriander, turmeric, black pepper, chill flakes and sea salt and cook for about 1 to 2 mins until fragrant.
- Add the coconut milk and bring to a simmer for 2-3 mins.
- Add fish, capsicum, beans and broccoli and cook for about 5 mins or until cooked through.
- Garnish with coriander leaves.
Tip
- You can substitute the salmon for a firm white fish too (I love it with king fish).
Serve
- Serve with steamed rice or cauliflower rice.
- Squeeze over the lime juice.

- 2 tbsp fresh dill -chopped
- 1 lemon/s -juice
- coconut oil -for cooking
Salsa
- 1 cup/s shredded cabbage
- 1 red capsicum/s -chopped
- 1 avocado/s (large) chopped
- 2 tbsp fresh dill -chopped
- ยฝ red onion/s -chopped
- 2 dried apricots -chopped (use sulphur free dried apricots if fresh apricots are not in season)
- ยฝ tsp ground cumin
- ยฝ tsp sea salt
Yoghurt
- 125 g natural, Greek or coconut yoghurt (ยฝ cup)
- ยฝ clove/s garlic -crushed
- 2 tbsp fresh dill -chopped
- 1 Cos lettuce -to serve
Instructions
- Marinade the fish in the dill and lemon for 5-10 minutes. Then pan fry the fish in coconut oil for a couple of minutes until cooked.
- Mix together all salsa ingredients in a bowl andย yoghurt ingredients in another bowl.

I buy fresh fish from my Farmers Market every weekend and this Crispy Salmon with Coriander Lime Pesto is my families favourite way for me to cook it. My kids fish preference is always Salmon or Trout (they are less keen on white fish unless I make my fish cakes).
Paired with this zesty pesto and creamy sweet potatoes, this meal is simply sensational and it’s my next twist on Jamie Oliver’s ’10 recipes to save your life’. As part of Jamie Oliver’s Food Revolution, I was one of 10 people selected world-wide to put my spin on 10 of Jamie’s favourite staple recipes. This is #6, my twist on Jamie’s ‘Salmon with Pesto dressed veg’.

This dish is packed with nutrition and perfect for busy weeknights. The hero, salmon, is a rich source of protein and omega-3 fatty acids which are essential for good health.
Store-bought pestos often contain damaging vegetable oil which are always best avoided. This home made pesto is super simple to make. The amazing healing herb coriander (also called cilantro in some cultures) is a classic example of food as medicine.ย It is extremely anti-inflammatory, anti-bacterial and also an amazing detoxifier and heavy metal chelator.ย Medicinally, it is used frequently for arthritis, inflammatory digestive disorders and to bind and excrete heavy metals in the blood. ย Needless to say, it is a very beneficial addition to any diet.
The cashew nuts add good fats and protein.ย The lime juice, zest and also the garlic further support immune function.ย So this pesto is just what the doctor ordered this winter.

This gluten-free dish features crispy-skinned salmon fillets, roasted sweet potato chips, and a fresh pesto made with coriander which is a nice change form basil pesto, lime, spinach, and toasted cashews. The pesto is flexible, with options to adjust for dietary needs.
How to make this baked pesto salmon recipe
Roast sweet potato chips in a baking pan (baking sheet) until golden and crisp. Then prepare the pesto sauce by blending coriander, spinach, lime, cashews, and Parmesan. Finally, pan-sear the fresh salmon fillets, cooking them skin-side down until crispy, and serve with a generous spoonful of pesto and sweet potato chips. If you own a Thermomix, we’ve also included Thermomix instructions for this recipe.
Serving suggestions and how to store

Crispy Salmon with Coriander Lime Pesto (and sweet potato chips)
Ingredients
- 3 sweet potato/s (large)
- 4 salmon filllet -skin on (or Trout if you prefer)
For the Coriander Lime Pesto
- 1 bunch/s fresh coriander leaves
- 30 g baby spinach (approx. handful)
- 1 clove/s garlic -crushed
- 60 g raw cashew nuts (ยผ cup) toasted
- 30 g parmesan cheese (2 tablespoons) finely grated
- 1 lime/s -juice and zest
- 20 ml macadamia nut oil (1 tablespoon)
- 1 red chilli/s (optional)
Serve
- 1 lime/s - quartered
Instructions
Start with roasting your sweet potato chips:
- Pre-heat your oven to 220โ/420โ (fan-forced).
- Add ghee, coconut oil, lard (or the fat of your choice) to a baking dish and pop into the oven to heat until the fat is hot.
- Cut your sweet potato to form thin chips. Add to the hot fat, season with salt and pepper and toss in the fat so they are evenly coated. Make sure they are in a single layer or they won't crisp up so well.
- Bake for 20 minutes or until golden.
Now makeย your pesto:
- In a food processor grate the parmesan and set aside. If using a Thermomix, 10 sec, speed 7.
- Place the coriander, spinach and cashews in the processor and pulse until just chopped. If using a Thermomix, turbo 2-4 times.
- Mix in the parmesan, lime juice and zest, garlic and macadamia oil (and optional chill) until combined. If using a Thermomix 10 seconds, reverse speed 4.
- You have control over the texture of this pesto. For a chunky pesto process less, or smoother process more.
- Set aside.
Lastly cook your salmon (start this 5 minutes before your chips will be ready):
- Cut your fish to portion. I try to buy mid-sections of the fish so they are all approx. the same thickness (so they cook inย the same amount of time).
- Pat the flesh dry with a paper towel and then rub with a little olive oil and season well on both sides with sea salt and pepper.
- Heat a non-stick or well seasoned cast iron pan so that it is moderately hot and cook the salmon skin side down for 4-5 minutes until the skin crisps. Don't try to turn or flip it to early or the skin will stick.
- Using a thin spatula careful turn the fish and cook for 2 - 3 minutes or until just cooked through (remember it will continue to cook after you take it from the heat).
Serve
- Serve the salmon on a warm plate with a dollop of pesto, the sweet potato chips and fresh lime juice (or fresh lemon juice).
- I alsoย serve with steamed greens or a simple green salad.

Ceviche was a dish I became very familiar with when travelling the coastal parts of South America many moons ago. I fell in love with it then and my simple ceviche has become a firm favourite with my family since (this is one of a very few ways my fish fussy daughter will eat fish).

These gluten-free fish fingers are a simple, wholesome take on a family favourite. Using firm white fish fillets coated in polenta and coconut flour, theyโre crispy on the outside, tender on the inside, and served with a tangy homemade yoghurt tartare. This recipe is not only gluten-free but also quick to make, perfect for a weeknight meal or a healthier alternative to takeout fish and chips.
Health benefits
Fish is an important source of protein and essential omega 3 fatty acids, an essential fat very commonly lacking in many diets. Commercially produced fish fingers are another processed food disaster in my book. My first concern is where the fish is sourced and it’s level of contamination. Secondly, they contain ย a lot of gluten and also yeast which burdens tiny tummies (even if not gluten sensitive). Lastly, they are yet another source of dangerous polyunsaturated and trans fats (for which the only safe amount is zero)! Trans fats are stored in the cells of your body and their effect is lifelong. Want good health and more energy, start by eliminating trans and processed fats from your diet? I have spoken in more detail about fats here. The yoghurt in the tartare sauce adds probiotics for gut health, while polenta provides a gluten-free, fibre-rich crumb.

Using high-quality, fresh ingredients like free-range eggs and firm white fish fillets ensures a nutritious meal. The non-GMO or organic polenta gives a satisfying crunch, while the yoghurt tartare offers a zesty, probiotic-packed dip that complements the fish perfectly.

Gluten free fish fingers - with a yoghurt tartare
Ingredients
Fish Fingers
- 500 g firm white fish fillets - skinned and pin boned (I like snapper, blue eye, kingfish, mahi-mahi)
- 1 egg/s
- 80 g polenta (ยฝ cup) non-GMO or organic
- 2 tbsp coconut flour (or spelt if not gluten intolerant)
- Sea salt and freshly ground black pepper - to taste
Yoghurt Tartare
- 125 g natural, Greek or coconut yoghurt (ยฝ cup)
- 1 tbsp capers - roughly chopped
- 1 lemon/s - zest
- Sea salt and freshly ground black pepper - to taste
Instructions
Fish Fingers
- Cut your fish into fingers, about 2cm wide
- In a bowl, beat the egg
- In a second bowl mix the polenta, flour, and salt until combined
- Heat a large pan over a medium-high heat. ย I cooked mine in a mild coconut oil, but you could also use butter or ghee.
- Dip the fish pieces in the egg then toss in the crumb and cook in the hot oil, turning once the crumb browns.
- Serve immediately.
Yoghurt tartare
- Mix all ingredients together in a small bowl.

These healthy fish cakes are a simple and delicious way to get more fish into your meals. They’re quick to whip up, packed with fresh ingredients like parsley and lemon, and coated in sesame seeds for a satisfying crunch. Perfect for a weeknight dinner or an easy lunch!
They are particularly good for those that aren’t so keen on fishy stuff as the flavour and texture changes altogether when it is processed (so is quite different to grilled or pan fried fish). My daughter really isn’t keen on fish (unless it’s battered), but loves these, she says they don’t even taste like fish. I’ve had one lady tell me she presents these to her fish fussy kids as ‘chicken nuggets’ and they actually buy it ha ha!

Healthy Fish cakes - (that even the fish fussy will love)
Ingredients
- ยผ bunch/s fresh parsley leaves
- 1 red onion/s (small) peeled
- 1 clove/s garlic -peeled
- 500 g firm white fish -like Snapper, Blue eye or mahi-mahi, roughly diced
- 1 lemon/s -zest finely grated and juice of half lemon
- Sea salt and freshly ground black pepper -to taste
Coating
- 70 g sesame seeds (ยฝ cup) -with a little sea salt mixed through
Sauce
- 115 g whole egg mayonnaise (ยฝ cup)
- ยฝ lemon/s - tablepoon juice
- ยผ tsp smoked paprika
- ยผ tsp sea salt
- ยฝ tsp honey or rice malt syrup
Instructions
- In a food processor, process the parsley, onion and garlic until finely chopped. ย If you have a Thermomix 10 seconds, speed 4.ย
- Add the fish, seasoning, lemon and zest and process to a rough paste. If using a Thermomix 15 seconds, speed 5.
- If you don't have a processor, you can dice the ingredients finely and squeeze together with your hands.
- Roll with wet hands into patties.
- Dip into the sesame seeds and set aside (refrigerate) until ready to cook.
- Over a moderate to a high burner, heat enough coconut oil, butter, ghee or olive oil to coat the bottom of your frying pan.
- Cook the fish cakes for about 3-4 minutes on each side or until just brown.
- Serve immediately.
To serve
- Serve with the dipping sauce.
Store
- Store in an airtight container in the fridge. My kids enjoy leftovers in their school lunches cold.
Notes
Steam them
Don't coat in the sesame seeds. Simply steam them for a lovely, moist result. ย Although I personally love the crunchy coating if fried.Thai fish cakes
Add a 2cm piece of finely grated ginger, tablespoon of tamari (or liquid aminos for soy-free), red chilli to taste and lime juice and zest instead of lemon. Swap the parsley for fresh chopped coriander leaves (cilantro). Steaming them will give a more authentic result and serve with sweet chilli sauce.Sesame-free
Either leave off the coating or coat in rice-crumbs instead.ย This will give more of a 'fish finger' finish.Garlic and onion-free
Replace them with aย 2cm piece of finely grated ginger and a pinch of chilli flakes.Veggie boost

Fish Tortillas, buffet style.
Ingredients
For the fish
- 500 g firm white fish -I like snapper, mahi mahi or cod, 2cm dice
- 1 tbsp extra virgin olive oil -extra virgin
- 1 tbsp smoked paprika (or you can use pure Mexican spice mix, my spice blend recipe here))
- 1 tsp dried thyme
- Sea salt and freshly ground black pepper -to taste
- 1 red onion/s (large) sliced
- ยฝ bunch/s fresh coriander leaves -finely chopped (serve on the side if this is a deal breaker for fussy kids)
Guacamole
- 1 avocado/s (large)
- 1 lime/s -juice (zest optional)
- 1 clove/s garlic -crushed
- 3 tbsp natural, Greek or coconut yoghurt
- Sea salt and freshly ground black pepper -to taste
Serve
- 1 lime - quartered
- Salad (to serve)
Instructions
- Firstly prepare your sides (below) so they are ready to serve.
Guacamole
- Process or mash the avocados with a fork. Add the remaining ingredients and mix well to combine. Place in a serving bowl.
Fish
- Toss the fish in a small splash of oil followed by the spices, thyme, sea salt and pepper.
- Over a moderate heat, add a little more oil to a large fry pan and cook the red onion for 2 minutes or until it starts to soften. Add the fish and turn each piece or stir gently until it is cooked through. It should only take 4-5 minutes max.
- Turn off the heat, stir through the coriander and place in a serving bowl.
- Serve with guacamole and your choice of sides.
Options for sides to serve:
- Choose at least three of the following sides. I always serve them all in separate bowls so everyone can build their own tortilla (kids love this):
- Serve in a lettuce cup tortilla (cos and iceberg lettuce works well)
- If using store bought tortillas, make sure they are additive-free and without vegetable oil (the only ingredient should be corn and perhaps sea salt)
- 2 tomatoes, diced (you can add a little diced red onion to make a salsa if you like)
- 1 small cucumber, diced
- Lettuce leaves, shredded (dress with lime juice)
- Shredded cabbage slaw
- Sprouts, of your choice (dress with lime juice)
- 1 capsicum, diced
- 2 large carrots, grated (dress with lime juice)
- This is also really lovely with diced fresh mango if in season
- 1 fresh chilli, finely chopped or dried chilli flakes
