Avocado Truffles

These dark chocolate Avocado Truffles are so simple to make and really very versatile, sweet treats. Enjoy as is or choose flavours to add – choc orange and choc mint are particular family favourites but there’s so much flexibility with this recipe. Being made from fresh avocado combined with dark chocolate and sweetener, these will last a few days in the fridge or weeks in the freezer – if they aren’t all eaten by then!

Health benefits

Avocado gives you a dose of healthy monounsaturated fats that support steady energy and keep you satisfied, while dark chocolate provides antioxidants and a lovely richness. Because these truffles rely on wholefood ingredients with no fillers, theyโ€™re far more satiating than traditional store-bought chocolates.

Ingredients

The mixture comes together with ripe avocados blended with melted chocolate (dark), a touch of vanilla extract and your choice of natural sweetener. A little cacao powder (or cocoa powder) finishes them off, though you can easily coat or mix in nuts, coconut or other add-ins.

How to make Avocado Chocolate Truffles

To make these healthy truffles, everything blends into a smooth paste in just a few minutes, then rests in the fridge until firm enough to roll. Once chilled, scoop and roll into small balls, dust in cacao or your chosen coating and keep chilled until ready to serve. Itโ€™s a very forgiving recipe, so you can adjust the sweetness or add flavour variations as you go.

Serving suggestions and how to store

These are best served cold, so the texture stays fudgy and firm. Keep a batch in the refrigerator for the week or store them in the freezer for longer. They thaw quickly, making them a handy treat to have on hand when guests pop in or when you want something sweet after dinner.

Vary these Avocado Truffles to suit your dietary needs

These are already suitable to a gluten-free diet. You can easily adapt these to vegan by choosing a dairy-free chocolate, using rice malt syrup for a lower-fructose option or rolling them in nuts, coconut or dried raspberries for extra texture. A splash of rum or a little peppermint or orange zest also turns them into a completely different style of truffle without needing a new recipe.

Avocado Truffles

These Avocado Truffles are so simple to make and really very versatile. Enjoy as is or choose your favourite flavour to add.

Ingredients

  • 170 g dark chocolate – melted
  • 2 avocado/s – I used the flesh of 2 x 200g avocados
  • 1 tsp vanilla
  • 85 g rice malt syrup, honey or maple syrup – (ยผ cup)
  • 1 tbsp cacao powder (to roll in)
Metric – US Customary

Instructions

  • Melt the chocolate by placing it in a bowl over just boiled water. Mix until melted.
  • In a food processor or blender, process all the ingredients (except the cacao powder) until a smooth paste is formed. Mix through any of the flavour options.
  • Place into an airtight container in the fridge for 2 – 3 hours.
  • Once the mixture is firm, scoop out a heaped teaspoon and roll into balls.
  • You can roll in cacao powder as I have done in the photo, or roll in any of the other options (nuts, coconut, etc)

Thermomix Method

  • In a completely clean and dry Thermomix bowl, melt the chocolate (broken into rough pieces) for approx 3 minutes, 70deg, speed 2. (Adjust time as needed until all chocolate melted.)
  • Add avocados, vanilla, sweetener and any flavour options. Mix 1 minute, speed 4, until a smooth paste is formed.
  • Follow from Step 3 above, using a rubber spatula to thoroughly scrape out the Thermomix jug.

Store

  • Store in the fridge or freezer and serve well chilled.

Notes

Flavour options

  • Orange zest or orange oil, to taste
  • Peppermint oil or essence, to taste
  • Add in Rum/ conjac (for a Festive flavour)
  • Add or roll in toasted crushed nuts
  • Add or roll in coconut
  • Add or roll in dried raspberries

Dairy-free

Make with a dairy-free chocolate.

Low Fructose

Use rice malt syrup as your sweetener.

Raspberry Chocolate Slice

This Raspberry Chocolate Slice is quick and easy to make. Even my ‘not fussed on fruit baked into things’ son loves this delicious snack – probably because the raspberries reduce down to a jam-like layer. Including almond meal (or seed meal) with the wholegrains in this slice adds sustenance and long-lasting energy.

Health benefits

The almond meal adds protein and healthy fats, while the oats provide fibre and keep you fuller for longer. Raspberries are a great source of antioxidants, particularly vitamin C, and the chocolate offers flavonoids, which are known to support immune health. The use of natural sweeteners like honey or maple syrup keeps the sugar content lower compared to processed treats.

Ingredients

The base of this slice is made from a mix of almond meal, wholemeal spelt flour, and oats, held together by butter or coconut oil. A layer of raspberry filling gives it a fruity zing, while dark chocolate chunks provide a rich, indulgent flavour throughout. For those with dietary restrictions, there are variations for gluten-free, vegan, and nut-free options.

How to make Raspberry Chocolate Slice

Start by preparing the crumble base by melting the butter (or coconut oil) and sweetener in a saucepan over a medium heat, then combining with the dry ingredients. Press two-thirds of the mixture with a spatula into a lined tin to form the base. Mix the defrosted raspberries with arrowroot and vanilla, then spread over the base to form the raspberry layer. Add half the chocolate pieces, and the top layer is simply the remaining crumble mixture, and the rest of the chocolate on top. Bake for about 20 minutes until golden brown, then cool completely before slicing. If you own a Thermomix, we’ve also included Thermomix instructions for this recipe. You can also use a food processor.

Serving suggestions and how to store

This raspberry slice is delicious on its own (or packed into the lunchbox) or served warm with a dollop of cream or yoghurt. Itโ€™s best stored in an airtight container in the fridge to keep it firm, or you can freeze it for a longer shelf life.

Vary this Raspberry Chocolate Slice to suit your dietary needs

For a gluten-free version, use gluten-free flour and substitute the oats with quinoa flakes. For a dairy-free or vegan option, replace butter with coconut oil and use a plant-based sweetener like maple syrup. Nut allergies? Swap the almond meal with ground seeds to keep it nut-free.

Ingredients

Base / Crumble

  • 125 g butter or coconut oil
  • 170 g rice malt syrup, honey or maple syrup (ยฝ cup)
  • ยฝ tsp bicarbonate of soda
  • 120 g almond meal (1 cup) approx
  • 120 g wholemeal spelt flour (1 cup)
  • 200 g rolled oats (2 cups) or quinoa flakes (or a mixture)
  • 1 tsp vanilla

Raspberry filling

  • 120 g frozen raspberries (1 cup) defrosted and most of the liquid strained
  • 1 tsp trueย arrowroot flourย  – or tapioca
  • 1 tsp vanilla – essence
  • 100 g chocolate – broken into pieces (or buttons)

Instructions

  • Pre-heat the oven to 180โ„ƒ / 350โ„‰ (fan-forced).
  • In a small pot melt the butter (or coconut oil) and sweetener, mixing to combine. Add the bicarb and stir well.
  • Mix the almond meal, flour, oats (or quinoa) and vanilla in a bowl.
  • Add the butter/ sweetener mix and stir to combine well.
  • Line a small tin (approx. 17 x 27cm) with baking paper. Press โ…” of the mixture into the base of the tin and press down firmly with wet hands (the remaining โ…“ will form the crumble top, so set aside until after the fruit is ready).
  • Put the raspberries, arrowroot and vanilla into the small bowl and mix well, mushing up the raspberries.
  • Top the base with the raspberry mixture and half the chocolate and with wet hands, place with the rest of the crumble over the raspberries. Top with the remaining chocolate pieces.
  • Bake for approximately 20 minutes or until just golden brown.
  • Allow to cool in the pan, refrigerate until firm and then cut into slices (cooling it allows for it to be sliced without crumbling).

Thermomix Method

  • Melt the butter and sweetener 1 minute, temp 90, speed 3 or until melted and combined. Add the bicarb and mix 5 seconds speed 3.
  • Add the rest of the crumble ingredients to the butter/sweetener and mix 15 seconds, speed 3. You may need to scrape the sides to fully combine.
  • Assemble as above.

Serve

  • I also love this heated up with fresh cream, very indulgent!

Store

  • Airtight in the fridge or freezer.

Notes

Gluten and grain-free

Substitute the spelt for gluten free flour and the oats with quinoa flakes (rolled quinoa).

Dairy-free

Substitute the butter with coconut oil.

Vegan

Choose rice malt or maple syrup as your sweetener. Substitute the butter with coconut oil.

Nut-free

The almond meal can be substituted with any ground seed mix.

Fructose friendly

Choose rice malt syrup for your sweetener.

This healthy choc chip muesli bar recipe is a quick and easy homemade snack that will become a go-to for kids lunchboxes or an afternoon energy boost. Made with wholesome ingredients, they’re a healthier alternative to store-bought bars, plus theyโ€™re super simple to whip up at home. Perfect for batch baking and customising to suit your familyโ€™s taste!

I’ve been asked for a healthy choc chip muesli bar recipe that is refined sugar-free and bakes similar to commercial bars, so this is my attempt at that. Commercial, processed muesli bars I’m told are cooked under high pressure and contain large amounts of sugar which is why they have that crispy texture. But I think this recipe is as good as it gets and it certainly has my kids tick of approval.

You can swap the coconut oil for butter if you like, but coconut oil tightens and toughens as it cools so it really contributes to the crispness and firmness of these bars.

Health benefits

By skipping the processed sugars, oils and preservatives found in most commercial bars, you’re opting for a cleaner, more nourishing treat. Packed with fibre from oats and healthy fats from coconut oil or butter, these choc chip muesli bars offer a balanced snack to keep you feeling full and energised. The dark chocolate chips are antioxidant rich and low in sugar. You can also boost nutrition by adding mixed nuts or seeds for extra protein and minerals.

Ingredients

This recipe uses pantry staples like oats, coconut oil, vanilla extract and honey (or your preferred sweetener like brown rice syrup), making it easy to customise based on what you have on hand. You can swap in your favourite nuts or seeds, and even add dried fruits or zest for an extra twist of flavour (see variations for ideas).

How to make choc chip muesli bar

To make chocolate chip granola bars, melt the coconut oil with your choice of sweetener, then mix it into the oats and nuts to evenly coat them. After the mixture cools, stir in the choc chips (and any extra mix-ins), press the mix firmly into a slice pan lined with baking paper (parchment paper), and bake until golden. Refrigerating before slicing ensures firm, crumb-free bars. It’s a simple, fuss-free process that delivers delicious results!

Serving suggestions and how to store

These homemade granola bars are great for lunchboxes or as a grab-and-go snack. Store them in an airtight container in the fridge (for a week) or freezer for up to a month, and enjoy straight from the fridge for the best texture.

Vary this choc chip muesli bar to suit your dietary needs

For a vegan version, use vegan chocolate chips and your preferred plant-based sweetener. To make them gluten-free, swap the oats for quinoa flakes or rolled rice flakes. To make them nut-free, add seeds like pepitas instead of nuts. You can also add a fruity twist with dried apricots or currants, or go for a chocolate-orange flavour by adding orange zest.

Ingredients

  • 60 g coconut oil (ยผ cup), or butter
  • 85 g rice malt syrup, honey or maple syrup (ยผ cup)
  • 50 g coconut sugar or rapadura (ยผ cup), or leave out if you donโ€™t have a sweet tooth
  • 1 tsp vanilla
  • 230 g rolled oats – or quick oats if youโ€™re after a less textured bar (2 cups)
  • 1 cup/s mixed nuts or seeds – of choice
  • 85 g chocolate chips (ยฝ cup)

Instructions

  • Preheat the oven to 170ยฐC/338ยฐF (fan-forced).
  • In a small pot melt the coconut oil (or butter) over a low heat and mix in the sweetener, optional coconut sugar or rapadura and vanilla to combine well.
  • Mix in the oats and nuts or seeds of your choice well (so the dry is very well coated by the wet). I do this with wet hands, almost massaging it together until the mixture is super sticky. If you can, pulse this in a food processor, you'll get a firmer, more commercial like bar (see the consistency in the video below).
  • Allow the mixture too cool. Stir through the choc chips.
  • Line a 18 x 28 cm slice tin and press in the mixture with wet hands so it's nice and firm (make sure itโ€™s really compact).
  • Bake for 20 minutes.
  • Cool, refrigerate and chill well before cutting. This helps to get nice crumb free slices. If you cut it without first chilling, it will crumble.

Thermomix

  • Preheat the oven to 170ยฐC/338ยฐF (fan-forced).
  • Melt coconut oil in bowl. 2 minutes, 90, speed 1. Time will vary according to temperature of your oil; adjust time as needed.
  • Add in the sweetener, rapadura and vanilla. Mix to combine. 30 seconds, speed 3.
  • Weigh in the oats and nuts and combine. 20 seconds, speed 3, reverse.
  • Add the choc chips and stir in. 20 seconds, speed 2, reverse (or you can use the spatula to mix by hand.)
  • Line a 18 x 28 cm slice tin and press in the mixture with wet hands nice and firm (make sure itโ€™s really compact).
  • Bake for 20 minutes.
  • Cool, refrigerate and chill well before cutting. This helps to get nice crumb free slices. If you cut it without first chilling, it will crumble.

Store

  • Store in an airtight container in the fridge or freezer.

Notes

Choc-orange

Add in the zest of one orange (add with the coconut oil).

Make it fruity

Replace the chocolate with currants, dried apricots or the fruit of your choice.

Make it coco-nutty

Replace the nuts with a cup of shredded coconut.

Vegan

Use vegan choc chips and rice malt or maple syrup as your sweetener.

Fructose friendly

Choose rice malt as the sweetener and omit the rapadura.ย 

Gluten-free

Replace the rolled oats with the same cup measure of rolled quinoa flakes or rolled rice flakes.ย
