There’s been many requests for a new overnight oats flavour combination – here we have a lovely simple Strawberry Overnight Oats.

Ingredients

  • 3 tbsp rice malt syrup, honey or maple syrup
  • 350 g strawberries - finely diced
  • 2 tsp vanilla - essence
  • 80 g rolled oats (1 cup)
  • 10 g chia seeds (1 tbsp)
  • 250 ml coconut water (1 cup)
  • 120 g natural, Greek or coconut yoghurt (½ cup)

Instructions

  • In a medium sized container (with a lid) or two jars, place 1 tbsp of the sweetener, strawberries and 1 tsp vanilla. Mix well.
  • In another bowl, combine the oats, chia seeds, coconut water, 2 tbsp sweetener, 1 tsp vanilla, and yoghurt of choice. Mix well then spoon over the strawberries.
  • Refrigerate overnight and enjoy in the morning.

Serve

  • As is or topped with fresh strawberries.

Store

  • In an airtight container in the fridge or freezer.

Notes

Vegan

Replace the honey with maple or rice malt syrup and use coconut yoghurt.

Coconut-free

Replace the coconut water with water or a nut milk.

Boost the protein

Stir through your favourite protein powder. I love using this collagen protein—it’s flavourless, so it works beautifully across all kinds of recipes without altering the taste. You can also add hemp seeds or the Power Booster recipe.
