Char-grilled Brussels Sprouts

Char-grilled Brussels sprouts are a quick and tasty way to enjoy this often underrated vegetable. They develop a smoky, crispy exterior that pairs perfectly with a tangy mustard dressing. This recipe is perfect for a BBQ side dish or a light, healthy snack. Once you’ve tried Brussels sprouts cooked this way, they’ll become a regular feature in your meal rotation!
- 12-15 brussels sprouts
- 1 tsp dijon mustard
- 3 tbsp lemon-infused olive oil (I like Cobram Estate brand from all supermarkets)
- 2 tsp red wine vinegar
- Sea salt and freshly ground black pepper - to taste
Prepare you Brussels Sprouts by trimming the stalks and stripping the outer leaves. Cut lengthways in half.
Heat the chargrill on your BBQ to high.
Cook the sprouts very quickly, just until the outer leaves are blackening.
In a small bowl mix the mustard, lemon infused olive oil and vinegar.
Toss through the Brussels Sprouts to coat and serve immediately.
No lemon infused oil
