Sticky Mince Nourish Bowl

With just a few simple ingredients, you can create this Sticky Mince Nourish Bowl that’s perfect for busy weeknights, prep ahead lunches or lazy weekends.
- 1 tbsp extra virgin olive oil
- 500 g beef mince
- 2 clove/s garlic - finely grated or crushed
- 1 tbsp ginger root - finely grated
- 2 tbsp tamari
- 2 tbsp coconut sugar or rapadura
- 1 cup/s peas - fresh or frozen (defrosted)
- 1 red capsicum/s - diced
- 1 bunch/s fresh coriander leaves - leaves picked
- 4 tbsp onion pickle - recipe here, or kimchi, or sauerkraut
- 60 g mixed leaves - or wilted greens
- 1 lemon/s - or lime quartered
Place a pan or wok over a medium high heat.
Add the olive oil, beef, garlic and ginger. Stir-fry until the beef is cooked and there’s no liquid in the pan.
Then turn the heat up high, add the tamari and sugar and stir for 2-3 minutes, until the sugar caramelises.
For the last minute add the peas. Turn off the heat.
While the mince is cooking, pick the coriander leaves off the stems and dice the capsicum.
Serve
In a bowl place the mince, leafy greens, capsicum, coriander, onion pickle or kimchi. Serve with the wedge of lemon or lime. Mix together and enjoy.

The mince in an airtight container in the fridge or freezer.

Soy-free
Replace the tamari with coconut aminos (plus sea salt, to taste).Bulk it up
