Asian Sticky Pulled Pork
Ingredients
- 1 kg pork shoulder โ or collar, boned, fat trimmed
- 3 tbsp ginger root โ fresh and finely grated (approx. 50 g)
- 4 clove/s garlic – crushed
- 1 red chilli/s – long and halved (optional)
- 3 star anise
- 75 ml tamari – or coconut aminos (โ cup)
- 115 g rice malt syrup, honey or maple syrup (โ cup)
- 120 ml dry white wine (ยฝ cup)
- 120 ml chicken broth or stock (ยฝ cup)
- 1 ยฝ tsp Chinese five spice powder
Asian Slaw
- ยฝ red or white cabbage
- 1 green apple – sliced into matchsticks or a cup of diced pineapple
- ยฝ bunch/s fresh mint leaves
- 1 red capsicum/s โ sliced
Dressing
- 1 lime/s – juice
- 2 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 1 tbsp rice malt syrup, honey or maple syrup
- 1 red chilli/s – optional and diced
Instructions
- Preheat oven to 160ยฐC/ 320ยฐF (fan-forced).
- Place the pork in a cast iron Dutch oven or casserole dish with a heavy or tight fitting lid (if not tight, place a layer of foil under the lid or wrap the dish tightly with foil so the pork steams).
- In a small jug mix the ginger, garlic, chill, star anise, tamari, sweeter, wine, stock and five spice and pour over the pork.
- Cook for 3 hours, turning after an 1ยฝ hours.
- Remove the lid, break up the pork and increase the heat to 200ยฐC (390ยฐF) and cook for a further 20 minutes (uncovered) or until the sauce reduces and the pork is sticky and tender. Watch it carefully to get the caramelisation perfect.
- Make the slaw by mixing all the salad ingredients together. Mix the dressing ingredients together in a jar and shake well to combine. Dress the salad just prior to serving.
Serve
- Serve the pork with the salad.
- Great inside tortillas too.
Slow cooker
- This can certainly cooked in a slow cooker. However, as the speed and temperature varies between the many brands of slow cookers, base the amount of liquid you add and the cook time on a similar style of recipe in the guide book for your specific slow cooker. The general rule of thumb is to halve the liquid and double the cook time, but understanding your own slow cooker is the best guide.
- If you end up with a lot of liquid, you may need to reduce this on the stove top or in the oven to caramelise the meat and make it nice and sticky.
Make Ahead
- Re-heat in a low oven (covered) until just hot.

- Store in an airtight container in the fridge or freezer.

- Firstly place the pork shoulder then the remaining pulled pork ingredients into the Grab Bag.
- Carefully seal your Grab Bag. I close most of the seal then press out as much air as I can then complete the seal. Place the Grab Bag in the freezer.
- To cook, remove the Grab Bag from the freezer, place on a baking tray and thaw in the fridge overnight.
- Tip the contents of the Grab Bag into a large oven proof dish (with a tight fitting lid) or Dutch oven. It may still be a bit frozen; thatโs okay.
- Place the lid on the pot, set your oven to 150ยฐC/300ยฐF (fan-forced) and cook for 3ยฝ hours, turning halfway through.
- Remove the lid, break up the pork and increase the heat to 200ยฐC (390ยฐF) and cook for a further 20 minutes (uncovered) or until the sauce reduces and the pork is sticky and tender. Watch it carefully to get the caramelisation perfect.

Ingredients
For the filling, you will need butter, onion, garlic cloves, bunch silverbeet (also known as Swiss chard or rainbow chard), fresh basil leaves, black pepper, sea salt, lemon zest, a beaten free-range egg, crumbled feta cheese, and quinoa flakes (or rolled oats). For the pastry, Carรชme All Butter Puff Pastry is recommended, and you’ll need milk (of your choice) and chia seeds for brushing and sprinkling on top.
How to make these silverbeet basil feta rolls
Preheat your oven. Start by sautรฉing the onion and garlic in butter for a minute, then add the silverbeet and cook for an additional minute until it wilts. Stir in the basil and transfer the mixture to a food processor, leaving any excess liquid behind. Season with black pepper, sea salt, and lemon zest, then add the egg, feta, and quinoa flakes. Process until you reach your desired consistency, adding more quinoa flakes if the mixture is too wet. Allow the filling to cool completely before assembling.
To assemble, halve the puff pastry sheet and divide the filling evenly between the pieces. Roll the pastry and pinch the seam closed, placing the seam side down on a baking tray. Brush with milk and sprinkle chia seeds over the top. Bake until the pastry is puffed and golden.

Silverbeet Basil Feta Rolls
Ingredients
Filling
- 2 tbsp butter
- 1 onion/s - finely diced
- 1 clove/s garlic - finely diced
- 1 bunch/s silverbeet -washed, dried and finelyย chopped
- 1 bunch/s fresh basil leaves - approx. 2 handfuls & finely chopped
- ground black pepper - to taste
- ยผ tsp sea salt - or to taste
- 1 lemon/s - large (zest)
- 1 egg/s - beaten
- 150 g feta cheese - crumbled
- 60 g rolled / flaked quinoa (or rolled oats can be used instead) (ยฝ cup)
- 1 Carรชme All Butter Puff Pastry (I love their wholemeal spelt)
- 2 tbsp milk (of choice)
- 1 tbsp chia seeds - black
Instructions
- Preheat your oven to 200ยฐC/395ยฐF (fan-forced).
- In a large pan or skillet sautรฉ the onion and garlic in the butter for a minute.
- Add the silverbeet and cook for another minute or so stirring continually until it has just started to wilt.
- Remove from the heat and stir in the basil. Pop this into a food processor, leaving behind any excess liquid.
- Season with black pepper and sea salt and add the lemon zest, egg, feta and rolled quinoa flakes.
- You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats. Allow to cool fully before assembling.
- To assemble, halve the sheet of puff pastry and divide the silverbeet filling evenly between the two pieces.
- Roll and pinch together the seam, placing it facing down on the baking tray. Brush with the milk and sprinkle over the chia seeds.
- Bake for approximately 20-30 mins or until the pastry is puffed and golden.
Thermomix
- Chop the garlic, 5 sec speed 5. Add the onion to chop, 5 seconds, speed 5. Add the butter and sautรฉ, 1 min, 100, speed 1.
- Add the silverbeet and cook 1-2 mins, temp 100, speed 2. Drain excess liquid.
- Add the basil, seasoning, lemon zest, egg, feta and rolled quinoa flakes. Process, 15 sec, speed 5 (or until the consistency you are after). You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats.
- Allow to cool and assemble and bake as above.
Serve
- Enjoy immediately (I love this served with a beautiful tomato chutney).
Store
- Store in an airtight container in the fridge or freezer.
Make ahead
- You can make these ahead and then bake when needed. Otherwise, cooked rolls can be re-heated in an oven.

Healing Chicken and Vegetable Soup

- 2 tbsp extra virgin olive oil
- 5 clove/s garlic - crushed or finely grated
- 1 tbsp ginger root - finely grated
- 8 boneless and skinless chicken thighs - diced
- 1 ltr chicken broth or stock
- 1ยฝ tsp sea salt - if your broth is already salted reduce to taste
- 10 shiitake mushrooms - sliced
- 4 carrot/s - sliced
- ยฝ broccoli - broken into florets
- 2 red capsicum/s - diced
- 1 zucchini/s - diced
- 1 bunch/s fresh coriander leaves - chopped
Instructions
- Place a large pot over a moderate heat with the oil, garlic, ginger and chicken thighs.
- Stir-fry over a moderate heat for 5 minutes until the chicken looks translucent.
- Add the broth, sea salt and shiitake mushrooms and bring to a simmer for another 5 minutes.
- Then add the carrot, broccoli, capsicum and zucchini and cook for 5 more minutes to slightly soften the vegetables.
- Check the seasoning. Sea salt really brings out the flavour in this simple soup.
Serve
- Serve with the fresh coriander leaves.

- Re-heat in a pot over a low heat until just hot.
