This Potted Cheese recipe is a good one to remember when you have a few odd bits and pieces left over from a cheese board. Cheese is pricey, so never throw those random bits out again…instead turn them into something simply spectacular. Type of cheese I think the best potted cheese flavour and consistency comes…

Avocado Truffles
These dark chocolate Avocado Truffles are so simple to make and really very versatile, sweet treats. Enjoy as is or choose flavours to add – choc orange and choc mint are particular family favourites but there’s so much flexibility with this recipe. Being made from fresh avocado combined with dark chocolate and sweetener, these will last a few days in the fridge or weeks in the freezer – if they aren’t all eaten by then!
Health benefits
Avocado gives you a dose of healthy monounsaturated fats that support steady energy and keep you satisfied, while dark chocolate provides antioxidants and a lovely richness. Because these truffles rely on wholefood ingredients with no fillers, they’re far more satiating than traditional store-bought chocolates.
Ingredients
The mixture comes together with ripe avocados blended with melted chocolate (dark), a touch of vanilla extract and your choice of natural sweetener. A little cacao powder (or cocoa powder) finishes them off, though you can easily coat or mix in nuts, coconut or other add-ins.
How to make Avocado Chocolate Truffles
To make these healthy truffles, everything blends into a smooth paste in just a few minutes, then rests in the fridge until firm enough to roll. Once chilled, scoop and roll into small balls, dust in cacao or your chosen coating and keep chilled until ready to serve. It’s a very forgiving recipe, so you can adjust the sweetness or add flavour variations as you go.
Serving suggestions and how to store
These are best served cold, so the texture stays fudgy and firm. Keep a batch in the refrigerator for the week or store them in the freezer for longer. They thaw quickly, making them a handy treat to have on hand when guests pop in or when you want something sweet after dinner.
Vary these Avocado Truffles to suit your dietary needs
These are already suitable to a gluten-free diet. You can easily adapt these to vegan by choosing a dairy-free chocolate, using rice malt syrup for a lower-fructose option or rolling them in nuts, coconut or dried raspberries for extra texture. A splash of rum or a little peppermint or orange zest also turns them into a completely different style of truffle without needing a new recipe.

Beef Haloumi Meatballs
Another member’s request this week, these Beef Haloumi Meatballs are a delicious and super simple meal or snack. They have a hint of smokiness and are a beautiful flavour combination.
These Beef Haloumi Meatballs are a savoury, flavour-packed twist on traditional meatballs, made even more special with the addition of haloumi cheese. Perfect for a family dinner or batch cooking for lunchboxes, these meatballs are very versatile.
I’ve opted to bake them (because I’m lazy), but feel free to pan fry them or pop on the BBQ. They could even be shaped into bigger patties and turned into burgers if you’d prefer. They also make fabulous lunchbox snacks or mains.
Health benefits
This recipe combines beef mince, which is a great source of protein and iron, with nutrient-dense vegetables like capsicum and onion. Haloumi adds calcium, while the fresh breadcrumbs provide fibre.
Ingredients
The combination of beef mince, grated haloumi, and fresh breadcrumbs forms the base of these meatballs. Smoked paprika and oregano add warmth and depth, while Worcestershire sauce enhances the umami flavor. You can easily adapt this recipe with gluten-free or dairy-free variations to suit your dietary preferences. The oregano is rich in antioxidants.
How to make Beef Haloumi Meatballs
Mix all ingredients together in a large bowl, using your hands to combine everything well. Roll into golf ball-sized meatballs and place them on a lined baking tray. Bake in a preheated oven for about 15 minutes until golden and cooked through. For smaller meatballs, adjust the cooking time accordingly. If you own a Thermomix, we’ve also included Thermomix instructions for this recipe.
Serving suggestions and how to store
Serve these meatballs with a side of salad or roasted vegetables for a balanced meal. You can also pair them with your favorite pasta or a simple tomato sauce for a comforting dish. Store leftovers in an airtight container in the fridge or freezer for easy meal prep. Reheat in a low oven until just heated through.
Vary this Beef Haloumi Meatballs recipe to suit
For a dairy-free version, omit the haloumi and add a tablespoon of nutritional yeast for a cheesy flavor. To make these gluten-free, simply swap the breadcrumbs for a gluten-free variety, and for a grain-free alternative, use almond meal instead of breadcrumbs. If you’re avoiding eggs, replace the egg with a chia or flax egg for an egg-free option.
Take a look at the variations (below the main recipe) for suggestions to alter the recipe to suit many specific dietary requirements.
