Avocado Truffles
These dark chocolate Avocado Truffles are so simple to make and really very versatile, sweet treats. Enjoy as is or choose flavours to add – choc orange and choc mint are particular family favourites but there’s so much flexibility with this recipe. Being made from fresh avocado combined with dark chocolate and sweetener, these will last a few days in the fridge or weeks in the freezer – if they aren’t all eaten by then!
Health benefits
Avocado gives you a dose of healthy monounsaturated fats that support steady energy and keep you satisfied, while dark chocolate provides antioxidants and a lovely richness. Because these truffles rely on wholefood ingredients with no fillers, theyโre far more satiating than traditional store-bought chocolates.
Ingredients
The mixture comes together with ripe avocados blended with melted chocolate (dark), a touch of vanilla extract and your choice of natural sweetener. A little cacao powder (or cocoa powder) finishes them off, though you can easily coat or mix in nuts, coconut or other add-ins.
How to make Avocado Chocolate Truffles
To make these healthy truffles, everything blends into a smooth paste in just a few minutes, then rests in the fridge until firm enough to roll. Once chilled, scoop and roll into small balls, dust in cacao or your chosen coating and keep chilled until ready to serve. Itโs a very forgiving recipe, so you can adjust the sweetness or add flavour variations as you go.
Serving suggestions and how to store
These are best served cold, so the texture stays fudgy and firm. Keep a batch in the refrigerator for the week or store them in the freezer for longer. They thaw quickly, making them a handy treat to have on hand when guests pop in or when you want something sweet after dinner.
Vary these Avocado Truffles to suit your dietary needs
These are already suitable to a gluten-free diet. You can easily adapt these to vegan by choosing a dairy-free chocolate, using rice malt syrup for a lower-fructose option or rolling them in nuts, coconut or dried raspberries for extra texture. A splash of rum or a little peppermint or orange zest also turns them into a completely different style of truffle without needing a new recipe.

Strawberry Overnight Oats
There’s been many requests for a new overnight oats flavour combination – so here we have a delicious, simple Strawberry Overnight Oats. My kids said this tastes like dessert for breakfast and has topped the charts for their favourite overnight oats recipe. I can’t wait to hear what you think of it.
This overnight oats recipe is a quick, delicious, and healthy breakfast perfect for busy mornings or even bulk meal prep. Packed with fibre, healthy fats, and a hint of natural sweetness, they are an excellent start to your day.
Health benefits
Strawberries provide a boost of antioxidants and vitamin C, while oats offer fibre to support digestion and keep you full longer. Chia seeds add healthy omega-3 fats, and coconut water provides natural electrolytes, keeping you hydrated.
Ingredients
The core ingredients are rolled oats, strawberries, chia seeds, coconut water, and your choice of natural yoghurt (or plain greek yogurt), all sweetened with honey, pure maple syrup, or rice malt syrup. Vanilla extract adds an extra layer of flavour.
How to make overnight oatmeal
Layer the sweetened strawberries in a container or mason jar. This forms a strawberry jam like layer (minus excessive amounts of sugar). Then stir the oats, chia seeds, coconut water, yoghurt, sweetener, and vanilla together in a separate bowl and spoon over the strawberries. Refrigerate overnight to allow the flavours to combine and oats to soften into a creamy texture. It really does form the perfect strawberries and cream combo.
Serving suggestions and how to store
Serve cold, straight from the fridge, or top with extra fresh strawberries for an extra burst of flavour. Store in an airtight container in the fridge, and it can be frozen for a quick, grab-and-go breakfast later.
Vary this to suit your dietary needs
To make the recipe vegan, use maple syrup or rice malt syrup, and substitute coconut yoghurt. For dairy-free, use coconut yoghurt. To make it coconut-free, simply replace the coconut water with regular water or almond milk. You can also add protein by mixing in your favourite protein powder or a power booster (or even almond butter). If you wanted to add some crunch, top with homemade granola.
Take a look at the variations (below the main recipe) for suggestions to alter the recipe to suit many specific dietary requirements.
