I can’t quite believe I’m writing this but it’s that time of year – Christmas is fast approaching so I thought it time to roll out a few festive delights, starting with these delicious, easy to whip-up Rich Chocolate Tarts. Who doesn’t love a rich chocolate tart?!
This is a great make-ahead dessert for Christmas day as you can prepare all the components in advance and then assemble just prior to serving. The buckwheat flour makes for a really simple, biscuity pastry crust. I love to use it in gluten-free baking because it is such a cost effective flour. I hope you love it!

Rich Chocolate Tarts
Ingredients
Chocolate Cashew Cream
- 125 g raw cashew nuts (approx. 1 cup) soaked 3-4 hours, or overnight
- 60 ml coconut water (¼ cup)
- 85 g rice malt syrup or maple syrup (¼ cup)
- 2-3 tbsp cacao powder (unsweetened Dutch process or raw)
Chocolate Pastry
- 280 g buckwheat flour
- 125 g butter room temperature
- 80-100 g coconut sugar or rapadura (approx. ½ cup)
- 2 tbsp cacao powder (unsweetened Dutch process or raw)
- 1 egg/s
Fruit
- 1 cup/s fruit -of your choice. I love fresh berries or cherries (think Black-forest flavours)
Instructions
Chocolate Cashew cream
- Start with the cashew cream. It can be made a day or so ahead, up to you. Soak the cashews for 3-4 hours or overnight. Drain and rinse.
- To make the chocolate cream, blend the soaked cashews in a powerful food processor or high speed blender until a coarse texture. If using a Thermomix 20 seconds speed 4.
- Add the rest of the ingredients and blend again until a silky smooth cream is formed. If using a Thermomix 30 seconds, speed 4-5 (you may need to scrape the sides once or twice).
- Set it aside until you're ready to serve.
Chocolate Pastry
- Pre-heat your oven to 180℃ (fan forced) and grease one large or four small springform tart tins.
- In a food processor, combine the butter and buckwheat flour until a crumb like texture forms. If using a Thermomix 20 seconds, speed 4.
- Add in the remaining ingredients and mix until the dough forms a disc. If using a Thermomix 30-40 seconds, speed 4. As you mix it it should come together.
- Wrap the dough in baking paper and pop in the fridge for 1 hour.
- Cut the dough in half (you have enough for two large tarts or 8 small tarts - see tip below). Any leftover dough can be refrigerated or frozen until needed.
- Roll the dough to about 5mm thickness. It's important to work quickly, especially in a hot kitchen - as the dough softens, it's harder to work with. Cut the pastry to suit the tin you are using. You may need to bring the pastry back together and re-roll to use it all up. You can mend any tears or thin areas by pushing the dough into the tin with your fingers.
- Any leftover you can cut into shapes to decorate or just enjoy as biscuits.
- Cover the tarts with a sheet of baking paper and weight it to blind bake the shells.
- Cook for just 7 minutes for a small tart, 10 for a larger one. Remove from the oven and cool in the tins for a few minutes, then, when cool enough to handle, carefully push out of the base and cool completely on a wire wrack.
- Keep in an airtight container in the fridge or freezer until ready to serve.
To serve
- Top the shells with the cashew cream and garnish with fruit and shaved dark chocolate (optional, as pictured).
Tip
- Individual tarts are most fool proof as the larger tarts can crack when cutting (unless the pastry is cooked perfectly).

This Raw Coffee Slice is a rich and creamy treat that’s perfect for coffee lovers. With a nutty hazelnut base, a creamy coffee cashew layer, and a choice of dark chocolate toppings, it’s a deliciously indulgent dessert that’s both gluten-free and can be made vegan.
With the silly season fast approaching, I thought it timely to share a decadent desert that is perfect for entertaining (or even Christmas day). Dessert is something I always look to pre-prepare and this can be made weeks ahead if necessary. When I have friends over I really don’t want to spend a minute more than necessary in the kitchen (I hate missing out)!
I know I share lots of kid friendly recipes here (and if you check below I have a chocolate variation that is more family friendly). But sometimes it’s nice to have something just for the grown-ups. Having said that – my daughter is crazy for coffee flavoured anything (she’ll even try to sip black, unsweetened coffee if given the chance). I think I may have developed my kids taste for ‘bitters’ a bit too much!!

Base
- 200 g hazelnuts
- 85 g rice malt syrup, honey or maple syrup (¼ cup)
- 1 tbsp cacao powder (unsweetened Dutch process or raw)
Filling
- 350 g raw cashew nuts (soaked for minimum 2-3 hours)
- 85 g rice malt syrup, honey or maple syrup (¼ cup)
- 70 g coconut oil (â…“ cup)
- 50-70 ml espresso coffee -cooled (approx. 2 shots)
Chocolate topping (2 choices)
Melted Chocolate
- 150 g dark chocolate -melted
Instructions
Base
- Grind the hazelnuts in a food processor or powerful blender until a meal forms. If using a Thermomix, 5 seconds, speed 7.
- Add the sweetener and cacao and mix until well combined. If using a Thermomix, 10 seconds, speed 4.
- Press into a lined 20 x 30cm slice tin and put in the freezer whilst you make the filling.
Filling
- Drain the liquid from your cashews and rinse well.
- Process to form a paste. If using a Thermomix, seconds, speed 7.
- Add the rest of the ingredients and process until smooth and creamy. If using a Thermomix, 1 minute, speed 7. You may need to scrape the sides a few times.
- Spread the filling over the base and put back in the freezer to set (about 20 minutes).
Chocolate topping
- Either melt the dark chocolate in a bowl over a pot of hot water or make the raw chocolate by combining all the ingredients together.
- Once the filling is set, pour over the melted chocolate and set in the freezer (approx. 5 minutes).
- Cut it into squares and store in the freezer until ready to serve.

- ¼ bunch/s fresh mint leaves
- 1 tsp ground cumin
- ¼ red capsicum/s - roughly chopped
- 1 clove/s garlic
- Sea salt and freshly ground black pepper - to taste
- 35 g sesame seeds (¼ cup) for coating
Tahini Drizzle
- 3 tbsp hulled tahiniÂ
- 1 lemon/s (small) juice
- 1 tsp rice malt syrup or honey
- ½ tsp sea salt - or to taste
- Water - to thin sauce
Instructions
- Preheat oven to 220℃/430°F (fan-forced). Place approx. ¼ cup of sesame seeds onto a plate.
- To make the falafel balls, process all of the ingredients (except the sesame seeds) in a powerful food processor until it forms a course paste. If using a Thermomix blend 30 seconds, speed 6, scraping the sides until combined.
- Form balls (with about a tablespoon of paste) and roll into the sesame seeds.
- Place onto a lined baking tray for about 20 minutes or until golden brown.
- To make the Tahini drizzle, combine all of the ingredients adding enough water (tablespoon by tablespoon) to make a thick sauce.
Serve
- Serve hot or cold in a wrap or on a bed of salad.

I love recipes that are versatile and I think this healthy Satay Sauce is just that. Like all of my recipes it is very simple to make and I really love the delicate balance of Asian flavours which are perfect for both a light summer-time meal and a warming winter meal.
This healthy satay sauce swaps out peanuts for creamy cashews, creating a deliciously rich and nutty sauce that pairs perfectly with grilled meats, veggies, or even rice paper rolls. It’s quick to make and packed with fresh flavours from ginger, garlic, and lemongrass. It’s perfect for those with allergies to peanuts.

I like to make this with cashew nuts. Cashews bring healthy fats, protein, and essential vitamins to the table, while the ginger, garlic, and lemongrass support digestion and boost immune health. Coconut milk adds creaminess without dairy, making this satay sauce lighter but still rich and satisfying.
My Satay recipe is of the whole food kind, unlike many of the store bought ‘simmer’ style sauces. These processed sauces are nowhere near as tasty and contain dangerous additives and massive amounts of sodium and sugar (about half a cup of the sweet stuff in most jars I looked at). Two of the concerning additives I came across repeatedly are Caramel 1, which according to Additive Alert by Julie Eady, is linked to ‘gastrointestinal problems and hypersensitivity’ and 407 which is ‘a suspected carcinogen, linked to ulcerative colitis, damaging to the immune system and there is a concern re- birth defects.’ They also warn ‘do not give to infants and young children.’
So let’s just nourish our bodies every which way and make our own with this fast, simple recipe!

Healthy Satay Sauce (sans peanuts)
Ingredients
- 100 g raw cashew nuts (â…” cup) lightly toasted
- 1 red onion/s -peeled and halved
- 2 clove/s garlic -crushed or finely diced
- 1 tsp ginger root -peeled
- 2 stalk/s lemongrass -inner core only
- 1 tbsp coconut oil (or ghee or butter)
- 125 ml canned coconut milk (½ cup)
- 1 tbsp rice malt syrup (optional)
- 1 red chilli/s -finely diced  (optional)
- 1 tbsp tamari
- ½ lime/s -juice
Instructions
- In a food processor, pulse the cashews until they are just chopped (I like a bit of texture or the Satay will be too creamy). Set aside.
- Now add the red onion, garlic, ginger and lemongrass to the processor and process to a rough paste (if you don't have a processor you can finely grate them or pound in a mortar and pestle).
- Over a low heat, melt your fat and add the onion mix. Saute for a few minutes until the onion starts to soften.
- Then add the chopped cashews, coconut milk, optional chili, sweetener and 125ml (1/2 cup of water).
- Simmer for 5-10 minutes or until the sauce thickens.
- Stir in the tamari and lime juice and taste it. Adjust the heat (chilli), saltiness (tamari), sweetness (rice syrup or coconut sugar) and sour flavours (lime juice) to your taste, if necessary.
- Delicious served one of the ways below and with lime cheeks and fresh coriander leaves.
Traditional
- Thin the sauce with water or more coconut milk and drizzle it over satay sticks
Vegetarian
- Indonesian Gado Gado style is a quick, healthy summertime meal (as pictured). I use a mix of steamed and raw vegetables and boiled eggs. Here we have raw red cabbage, celery, cucumber, and capsicum. Steamed cauliflower, broccoli, asparagus (I'd usually add green beans too). The nice thing about eating this way is that the whole family can share and pick and choose what they want
Vegan
- This is delicious served with vegetables (as above) and tempeh
Wraps or rice paper rolls
- Grill some meat, toss with the satay sauce and wrap in mountain bread or rice paper rolls with lots of  julienned vegetables
Lettuce cups
- Grill some meat, toss with the satay sauce and serve with salad, Asian herbs, and vegetables in whole cos or iceberg lettuce cups
Store
- Store in an airtight container in the fridge.

Serving suggestions and how to store
Serve this raw cheesecake chilled, garnished with fresh strawberries or even some shaved dark chocolate for an extra indulgence. To make it extra decadent you could whip up some coconut cream to serve too. Store any leftovers in an airtight container in the fridge for up to 3 days.
Vary this raw strawberry cheesecake to suit
Substitute hazelnut meal with almond meal or swap cashews for macadamias for a different twist. If you’re vegan, stick to using maple syrup or rice malt syrup as your sweetener for a completely plant-based dessert. Raw Strawberry Cheesecake
Ingredients
Base
- 80 g hazelnut meal (½ cup)
- 15 g flaxseed (2 tablespoons) ground
- 15 g cacao powder (2 tablespoons)
- 15 g desiccated coconut (2 tablespoons)
- 30 g coconut oil (2 tablespoons)
- 65 g rice malt syrup, honey or maple syrup (3 tablespoons)
Strawberry cream filling
- 150 g raw cashew nuts (1 cup) raw and soaked for 2-3 hours in water and drained
- 150 g fresh hulled strawberries (the more flavoursome the strawberries, the better this will be)
- 1 tbsp chia seeds -preferably white
- 1 tbsp rice malt syrup, honey or maple syrup
- 1 tsp vanilla -powder, extract or essence
- 3 tbsp coconut water
Instructions
For the base
- In a bowl or food processor, combine your hazelnut meal, flaxseed meal, raw cacao and coconut. If using a Thermomix, 30 seconds speed 6.
- Add the coconut oil and rice malt syrup and mix until well combined and the mixture holds together when pressed. If using a Thermomix, 20 seconds, speed 4.
For the filling
- Process the soaked (drained) cashews until smooth and creamy. If using a Thermomix, 1 minute speed 6 (scraping the sides).
- Add the strawberries and process again. If using a Thermomix, 10 seconds speed 6.
- Add the chia, vanilla, and  coconut water and process until smooth. If using a Thermomix, 10 seconds speed 6.
- Assemble in a small glass by pressing the chocolate base into the glass and top with the strawberry cream.
- Chill until set, garnish with heart shaped strawberry halves and serve immediately.
