Banana Rhubarb Raspberry Slice

This Banana Rhubarbย Raspberry Slice not only looks amazing, it tastes sensational.ย  The sweetness of the ripe bananas paired with the tartness of the rhubarb really is a match made in heaven.

My kids are both back at school as of today and seeing as this Banana Rhubarb Raspberry Slice is their current favourite snack, it’s only fitting that I share it here in the membership. I can’t wait to hear how you love this, I hope it will be added to your planner and become your family’s new favourite too. Feel free to experiment with other fruits for the topping or if you prefer, you could just make the banana cake part.

Health benefits

This slice is packed with fibre from the bananas, wholemeal spelt flour, and raspberries, supporting digestive health. The rhubarb contributes calcium and vitamin K, while the bananas provide potassium for heart health. With minimal added sugar, this slice is a wholesome alternative to traditional sweet treats.

Ingredients

The ingredients include butter at room temperature, coconut sugar or rapadura (optional), free-range or organic eggs, very ripe bananas, vanilla (in powder, extract, or essence form), and milk of your choice. Ground cinnamon, bicarbonate of soda, and sea salt are also needed. For the dry ingredients, use wholemeal spelt flour. You will also need rhubarb, finely sliced, and fresh raspberries (frozen raspberries can be used if preferred).

How to make this banana rhubarb raspberry sliceย 

This banana bread begins with blending the wet ingredients, including mashed bananas, eggs, butter, vanilla extract and milk, into a smooth mixture. Dry ingredients such as wholemeal spelt flour, bicarb, and cinnamon are folded into the wet mix, creating a light batter. The batter is poured into a prepared slice tin and topped with thin slices of rhubarb and raspberries. Bake until the centre is set and golden brown.

Serving suggestions and how to store

Serve this slice warm as a comforting snack or dessert with a dollop of Greek yogurt or coconut yogurt. It also pairs well with a hot cup of tea. Store leftovers in an airtight container in the fridge for up to a week or freeze individual portions for convenience.

Vary banana rhubarb raspberry slice to suitย 

For a dairy-free version, swap butter with coconut oil or macadamia nut oil. Use your preferred gluten-free flour blend to make it gluten-free. To replace eggs, try chia eggs for a plant-based alternative. Feel free to experiment with different seasonal fruits like blueberries, apples, or pears for variety. For a protein boost, mix in nuts or seeds, or sprinkle them on top before baking.

Tip

Ensure the bananas are very ripe, as their natural sweetness is key to the flavour of this slice, with minimal added sugar used.

Banana Rhubarb Raspberry Slice

Ingredients

  • 125 g butter - at room temperature
  • 25 g coconut sugar or rapadura - 2 tbsp (optional)
  • 2 egg/s
  • 250 g banana/s - they need to be very ripeย (1 cup approximately)
  • 1 tsp vanilla - powder, extract or essence
  • 100 ml milk (of choice)
  • 1 tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • ยผ tsp sea salt
  • 200 g wholemealย speltย flour (1ยพ cups approximately)
  • 2 stem/s rhubarb - finely sliced
  • 140 g fresh raspberries (can use frozen if you like)

Instructions

  • Pre-heat the oven to 180ยฐC/ 350ยฐF (fan-forced). Line a slice tin (approx. 17 x 27cm) with baking paper.
  • Mix the butter, sugar, eggs, bananas, vanilla, milk and cinnamon in a high speed blender for a minute. Thermomix, 1 minute, speed 5.
  • Add the bicarb and salt and blend for a couple of seconds. Add the flour and fold through the mixture. Thermomix, flour symbol, a couple of turns until the flour is mostly incorporated into the wet. Finish with a spatula if necessary.
  • Place in a lined slice tin and top with finely sliced rhubarb and raspberries. Bake for 20 minutes or until the centre is cooked.

Store

  • Airtight in the fridge or freezer.

Notes

Dairy-free

Replace the butter with coconut oil or macadamia nut oil (the coconut oil does toughen it when it cools, but it's still delicious).

Gluten-free

Replace the flour with your favourite GF flour.

Egg-free

Rach tested egg-free for me and I'm happy to announce chia eggs were a success.ย 

Different fruit

You can absolutely switch up the fruit to suit your tastes and what's in season.

Boost the protein

Add any nuts or seeds to the batter or top.

Tip

The bananas need to be very ripe or it won't be sweet enough as there's very little added sugar.

Asian Sticky Pulled Pork

This Asian Sticky Pulled Pork is a delicious, melt-in-your-mouth dish that balances sweet, savoury, and aromatic spices. The long, slow cooking process ensures the pork is tender and caramelised, making it perfect for an impressive dinner or casual gatherings.

It couldn’t be quicker or easier to prepare and when you take it from the oven, you’ll have a melt in your mouth, sticky sweet pulled pork to enjoy. The zesty slaw is the perfect accompaniment to offset the sweetness of the pork so I highly recommend you make it. Sometimes we have this all piled into tortillas which is also extremely delicious.

Health benefits

Pork shoulder is a great source of high-quality protein and essential nutrients like B vitamins, zinc, and iron. The chicken broth adds gelatinous, gut healing goodness. The Asian slaw adds a fresh and crunchy contrast, providing fibre, antioxidants, and vitamins from the cabbage and apple. The use of fresh herbs like mint adds additional anti-inflammatory benefits.

Ingredients

The pulled pork recipe calls for a combination of aromatic ingredients such as fresh ginger, cloves garlic, and star anise to flavour the pork. Tamari or coconut aminos, along with your choice of sweetener (rice malt syrup, honey, or maple syrup), create a sticky, sweet glaze. The Asian slaw includes cabbage, apple or pineapple, capsicum, and mint, dressed with a simple lime and fish sauce vinaigrette.

How to make this Asian sticky pulled pork

To make this Asian pulled pork, begin by preheating your oven and placing the pork in a heavy, lidded pot (like a Dutch oven). Combine the ginger, garlic, chilli, star anise, tamari, sweetener, wine, stock, and Chinese five spice, and pour this mixture over the pork. Slow cook the pork for 3 hours, then increase the oven temperature to caramelise the pork until it becomes sticky. Meanwhile, prepare the Asian slaw by combining the salad ingredients and mixing the dressing just before serving. This is also great to make in a slow cooker, pressure cooker or instant pot too.

Serving suggestions and how to store

Serve the sticky pulled pork with the Asian slaw for a satisfying contrast of textures and flavours. It also pairs well with tortillas for an easy, handheld option. Leftovers can be stored in an airtight container in the fridge for a few days, or frozen for future use. Reheat in a low oven before serving.

Vary Asian sticky pulled pork to suit your dietary needs

For a wine-free version, substitute the wine with more stock or broth, plus a teaspoon of vinegar. If you’re soy-free, use coconut aminos in place of tamari. Seafood-free? Omit the fish sauce and use a tablespoon of sea salt instead. To make this fructose-friendly, use rice malt syrup as the sweetener. For a grain-free option, choose maple syrup. If you need it garlic-free, simply omit the garlic or replace it with garlic-infused oil if tolerated.

Other variations

You can make this shredded pork in a slow cooker by halving the liquid and extending the cooking time, but be sure to reduce the sauce afterwards for that perfect sticky texture. The Grab Bag Formula is another great way to prepare this dish ahead of time for easy, fuss-free cooking.

Ingredients

  • 1 kg pork shoulder โ€“ or collar, boned, fat trimmed
  • 3 tbsp ginger root โ€“ fresh and finely grated (approx. 50 g)
  • 4 clove/s garlic – crushed
  • 1 red chilli/s – long and halved (optional)
  • 3 star anise
  • 75 ml tamari – or coconut aminos (โ…“ cup)
  • 115 g rice malt syrup, honey or maple syrup (โ…“ cup)
  • 120 ml dry white wine (ยฝ cup)
  • 120 ml chicken broth or stock (ยฝ cup)
  • 1 ยฝ tsp Chinese five spice powder

Asian Slaw

  • ยฝ red or white cabbage
  • 1 green apple – sliced into matchsticks or a cup of diced pineapple
  • ยฝ bunch/s fresh mint leaves
  • 1 red capsicum/s โ€“ sliced

Dressing

  • 1 lime/s – juice
  • 2 tbsp fish sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp rice malt syrup, honey or maple syrup
  • 1 red chilli/s – optional and diced
Metric – US Customary

Instructions

  • Preheat oven to 160ยฐC/ 320ยฐF (fan-forced).
  • Place the pork in a cast iron Dutch oven or casserole dish with a heavy or tight fitting lid (if not tight, place a layer of foil under the lid or wrap the dish tightly with foil so the pork steams).
  • In a small jug mix the ginger, garlic, chill, star anise, tamari, sweeter, wine, stock and five spice and pour over the pork.
  • Cook for 3 hours, turning after an 1ยฝ hours.
  • Remove the lid, break up the pork and increase the heat to 200ยฐC (390ยฐF) and cook for a further 20 minutes (uncovered) or until the sauce reduces and the pork is sticky and tender. Watch it carefully to get the caramelisation perfect.
  • Make the slaw by mixing all the salad ingredients together. Mix the dressing ingredients together in a jar and shake well to combine. Dress the salad just prior to serving.

Serve

  • Serve the pork with the salad.
  • Great inside tortillas too.

Slow cooker

  • This can certainly cooked in a slow cooker. However, as the speed and temperature varies between the many brands of slow cookers, base the amount of liquid you add and the cook time on a similar style of recipe in the guide book for your specific slow cooker. The general rule of thumb is to halve the liquid and double the cook time, but understanding your own slow cooker is the best guide.
  • If you end up with a lot of liquid, you may need to reduce this on the stove top or in the oven to caramelise the meat and make it nice and sticky.

Make Ahead

  • Re-heat in a low oven (covered) until just hot.

Store

  • Store in an airtight container in the fridge or freezer.

  • Firstly place the pork shoulder then the remaining pulled pork ingredients into the Grab Bag.
  • Carefully seal your Grab Bag. I close most of the seal then press out as much air as I can then complete the seal. Place the Grab Bag in the freezer.
  • To cook, remove the Grab Bag from the freezer, place on a baking tray and thaw in the fridge overnight.
  • Tip the contents of the Grab Bag into a large oven proof dish (with a tight fitting lid) or Dutch oven. It may still be a bit frozen; thatโ€™s okay.
  • Place the lid on the pot, set your oven to 150ยฐC/300ยฐF (fan-forced) and cook for 3ยฝ hours, turning halfway through.
  • Remove the lid, break up the pork and increase the heat to 200ยฐC (390ยฐF) and cook for a further 20 minutes (uncovered) or until the sauce reduces and the pork is sticky and tender. Watch it carefully to get the caramelisation perfect.

Silverbeet Basil Feta Rolls

These Silverbeet, Basil and Feta Rolls are a quick and easy lunch or dinner. I’ve actually presented these to very ‘green’ fussy kids in the past and to their parents shock, they have happily enjoyed eating them. I think it has something to do with encasing it in pastry that gets them over the line!

Health benefits

These rolls provide a great source of plant-based nutrients, including vitamin K from the silverbeet and antioxidants from the basil. The quinoa flakes add fibre and protein to the dish, making them a satisfying option for those seeking a well-rounded, nutrient-dense meal. With the option to swap in dairy-free alternatives, they can be made suitable for various dietary needs, offering flexibility without compromising the taste.

Ingredients

For the filling, you will need butter, onion, garlic cloves, bunch silverbeet (also known as Swiss chard or rainbow chard), fresh basil leaves, black pepper, sea salt, lemon zest, a beaten free-range egg, crumbled feta cheese, and quinoa flakes (or rolled oats). For the pastry, Carรชme All Butter Puff Pastry is recommended, and you’ll need milk (of your choice) and chia seeds for brushing and sprinkling on top.

How to make these silverbeet basil feta rolls

Preheat your oven. Start by sautรฉing the onion and garlic in butter for a minute, then add the silverbeet and cook for an additional minute until it wilts. Stir in the basil and transfer the mixture to a food processor, leaving any excess liquid behind. Season with black pepper, sea salt, and lemon zest, then add the egg, feta, and quinoa flakes. Process until you reach your desired consistency, adding more quinoa flakes if the mixture is too wet. Allow the filling to cool completely before assembling.

To assemble, halve the puff pastry sheet and divide the filling evenly between the pieces. Roll the pastry and pinch the seam closed, placing the seam side down on a baking tray. Brush with milk and sprinkle chia seeds over the top. Bake until the pastry is puffed and golden.

Serving suggestions and how to store

These silverbeet basil feta rolls are best enjoyed immediately, paired with a tomato chutney for extra flavour. To store, place them in an airtight container in the fridge or freezer. You can also make them ahead of time and bake them when needed, or reheat cooked rolls in the oven.

Vary silverbeet basil feta rolls to suit your dietary needs

For a dairy-free version, replace the feta with a dairy-free feta or cashew sour cream. If you need a garlic-free option, you can omit the garlic or use garlic oil. For those avoiding onions, try substituting with a small bulb of diced fennel. If you’re gluten-free, simply replace the puff pastry with a gluten-free option. The feta can also be replaced with cheddar cheese or parmesan.

Ingredients

Filling

  • 2 tbsp butter
  • 1 onion/s - finely diced
  • 1 clove/s garlic - finely diced
  • 1 bunch/s silverbeet -washed, dried and finelyย chopped
  • 1 bunch/s fresh basil leaves - approx. 2 handfuls & finely chopped
  • ground black pepper - to taste
  • ยผ tsp sea salt - or to taste
  • 1 lemon/s - large (zest)
  • 1 egg/s - beaten
  • 150 g feta cheese - crumbled
  • 60 g rolled / flaked quinoa (or rolled oats can be used instead) (ยฝ cup)
  • 1 Carรชme All Butter Puff Pastry (I love their wholemeal spelt)
  • 2 tbsp milk (of choice)
  • 1 tbsp chia seeds - black

Instructions

  • Preheat your oven to 200ยฐC/395ยฐF (fan-forced).
  • In a large pan or skillet sautรฉ the onion and garlic in the butter for a minute.
  • Add the silverbeet and cook for another minute or so stirring continually until it has just started to wilt.
  • Remove from the heat and stir in the basil. Pop this into a food processor, leaving behind any excess liquid.
  • Season with black pepper and sea salt and add the lemon zest, egg, feta and rolled quinoa flakes.
  • You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats. Allow to cool fully before assembling.
  • To assemble, halve the sheet of puff pastry and divide the silverbeet filling evenly between the two pieces.
  • Roll and pinch together the seam, placing it facing down on the baking tray. Brush with the milk and sprinkle over the chia seeds.
  • Bake for approximately 20-30 mins or until the pastry is puffed and golden.

Thermomix

  • Chop the garlic, 5 sec speed 5. Add the onion to chop, 5 seconds, speed 5. Add the butter and sautรฉ, 1 min, 100, speed 1.
  • Add the silverbeet and cook 1-2 mins, temp 100, speed 2. Drain excess liquid.
  • Add the basil, seasoning, lemon zest, egg, feta and rolled quinoa flakes. Process, 15 sec, speed 5 (or until the consistency you are after). You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats.
  • Allow to cool and assemble and bake as above.

Serve

  • Enjoy immediately (I love this served with a beautiful tomato chutney).

Store

  • Store in an airtight container in the fridge or freezer.

Make ahead

  • You can make these ahead and then bake when needed. Otherwise, cooked rolls can be re-heated in an oven.

Notes

Dairy-free

Replace the feta cheese with a good quality dairy-free feta or cashew sour cream.

Garlic-free

Omit it or replace with garlic oil.ย 

Onion-free

Omit or replace with a small bulb of diced fennel.ย 

Gluten-free

Replace the pastry with a gluten-free pastry.ย
