I’ve actually presented these to very ‘green’ fussy kids in the past and to their parents shock, they have happily enjoyed eating them. I think it has something to do with encasing it in pastry that gets them over the line!

Ingredients
For the filling, you will need butter, onion, garlic cloves, bunch silverbeet (also known as Swiss chard or rainbow chard), fresh basil leaves, black pepper, sea salt, lemon zest, a beaten free-range egg, crumbled feta cheese, and quinoa flakes (or rolled oats). For the pastry, Carรชme All Butter Puff Pastry is recommended, and you’ll need milk (of your choice) and chia seeds for brushing and sprinkling on top.
How to make these silverbeet basil feta rolls
Preheat your oven. Start by sautรฉing the onion and garlic in butter for a minute, then add the silverbeet and cook for an additional minute until it wilts. Stir in the basil and transfer the mixture to a food processor, leaving any excess liquid behind. Season with black pepper, sea salt, and lemon zest, then add the egg, feta, and quinoa flakes. Process until you reach your desired consistency, adding more quinoa flakes if the mixture is too wet. Allow the filling to cool completely before assembling.
To assemble, halve the puff pastry sheet and divide the filling evenly between the pieces. Roll the pastry and pinch the seam closed, placing the seam side down on a baking tray. Brush with milk and sprinkle chia seeds over the top. Bake until the pastry is puffed and golden.

These silverbeet basil feta rolls are best enjoyed immediately, paired with a tomato chutney for extra flavour. To store, place them in an airtight container in the fridge or freezer. You can also make them ahead of time and bake them when needed, or reheat cooked rolls in the oven.

For a dairy-free version, replace the feta with a dairy-free feta or cashew sour cream. If you need a garlic-free option, you can omit the garlic or use garlic oil. For those avoiding onions, try substituting with a small bulb of diced fennel. If you’re gluten-free, simply replace the puff pastry with a gluten-free option. The feta can also be replaced with cheddar cheese or parmesan.

Silverbeet Basil Feta Rolls
Ingredients
Filling
- 2 tbsp butter
- 1 onion/s - finely diced
- 1 clove/s garlic - finely diced
- 1 bunch/s silverbeet -washed, dried and finelyย chopped
- 1 bunch/s fresh basil leaves - approx. 2 handfuls & finely chopped
- ground black pepper - to taste
- ยผ tsp sea salt - or to taste
- 1 lemon/s - large (zest)
- 1 egg/s - beaten
- 150 g feta cheese - crumbled
- 60 g rolled / flaked quinoa (or rolled oats can be used instead) (ยฝ cup)
- 1 Carรชme All Butter Puff Pastry (I love their wholemeal spelt)
- 2 tbsp milk (of choice)
- 1 tbsp chia seeds - black
Instructions
- Preheat your oven to 200ยฐC/395ยฐF (fan-forced).
- In a large pan or skillet sautรฉ the onion and garlic in the butter for a minute.
- Add the silverbeet and cook for another minute or so stirring continually until it has just started to wilt.
- Remove from the heat and stir in the basil. Pop this into a food processor, leaving behind any excess liquid.
- Season with black pepper and sea salt and add the lemon zest, egg, feta and rolled quinoa flakes.
- You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats. Allow to cool fully before assembling.
- To assemble, halve the sheet of puff pastry and divide the silverbeet filling evenly between the two pieces.
- Roll and pinch together the seam, placing it facing down on the baking tray. Brush with the milk and sprinkle over the chia seeds.
- Bake for approximately 20-30 mins or until the pastry is puffed and golden.
Thermomix
- Chop the garlic, 5 sec speed 5. Add the onion to chop, 5 seconds, speed 5. Add the butter and sautรฉ, 1 min, 100, speed 1.
- Add the silverbeet and cook 1-2 mins, temp 100, speed 2. Drain excess liquid.
- Add the basil, seasoning, lemon zest, egg, feta and rolled quinoa flakes. Process, 15 sec, speed 5 (or until the consistency you are after). You can process the mixture smooth or leave a little texture, up to you. If the filling seems very wet, add more quinoa flakes or oats.
- Allow to cool and assemble and bake as above.
Serve
- Enjoy immediately (I love this served with a beautiful tomato chutney).
Store
- Store in an airtight container in the fridge or freezer.
Make ahead
- You can make these ahead and then bake when needed. Otherwise, cooked rolls can be re-heated in an oven.

- 1 tbsp ginger root - finely grated
- 8 boneless and skinless chicken thighs - diced
- 1 ltr chicken broth or stock
- 1ยฝ tsp sea salt - if your broth is already salted reduce to taste
- 10 shiitake mushrooms - sliced
- 4 carrot/s - sliced
- ยฝ broccoli - broken into florets
- 2 red capsicum/s - diced
- 1 zucchini/s - diced
- 1 bunch/s fresh coriander leaves - chopped
Instructions
- Place a large pot over a moderate heat with the oil, garlic, ginger and chicken thighs.
- Stir-fry over a moderate heat for 5 minutes until the chicken looks translucent.
- Add the broth, sea salt and shiitake mushrooms and bring to a simmer for another 5 minutes.
- Then add the carrot, broccoli, capsicum and zucchini and cook for 5 more minutes to slightly soften the vegetables.
- Check the seasoning. Sea salt really brings out the flavour in this simple soup.
Serve
- Serve with the fresh coriander leaves.

- Re-heat in a pot over a low heat until just hot.

This Tuscan vegetable soup is a hearty and wholesome dish, packed with seasonal vegetables and Mediterranean flavours. It’s a great way to enjoy a nourishing, plant-based meal that is both comforting and filling. - 3 clove/s garlic – peeled and sliced
- 1 bulb/s fennel โ small bulb, diced
- 2 carrot/s โ large and diced
- 2 vine ripened tomatoe/s
- 1 tbsp fresh rosemary leaves – chopped
- ยฝ tsp fresh sage leaves (ยผ tsp dried)
- 1 zucchini/s โ diced
- 750 ml vegetable stock
- Sea salt and freshly ground black pepper – to taste
- 850 g can cannellini beans or (2 cups), drained and rinsed
- 100 g kale – bunch or spinach leaves
- 1 lemon/s
- 2 tbsp extra virgin olive oil – extra virgin
- 50 g parmesan cheese – grated to serve
Instructions
- In a large pot heat the olive oil over a low heat and add the onion, garlic, fennel, carrots, vine ripe tomatoes, rosemary, sage. Sweat with the lid on over a low heat for 10 mins.
- Add the zucchini, stock, cannellini beans and seasoning. Bring to a slow simmer for 10-15 minutes until the vegetables have softened nicely.
- Turn off the heat and stir in the kale or spinach and allow to sit for 5 minutes and wilt.
- Add the zest of one lemon and the juice of half. Drizzle over the olive oil and serve with parmesan and crusty sourdough.

Add a 6โ7 cm strip of parmesan rind with the broth. It adds a lovely flavour (remove to serve).Make it meaty

This is my healthy take on a Greek lasagna classic, Pastitsio. Ingredients
- 2 tbsp extra virgin olive oil - extra virgin
- 1 red onion/s - diced

- 600 g lamb mince
- 1 ยฝ tsp ground cinnamon
- 1 tsp mixedย spice
- 1 bay leaf/s
- 1 tsp dried oregano
- 60 ml red wine
- 1 zucchini/s - diced into 1 cm pieces
- 2 carrot/s - diced into 1 cm pieces
- 700 g tomato passata (puree)
- 125 ml chicken broth or stock
- Sea salt and freshly ground black pepper - or to taste
- 30 g baby spinach - chopped (1 cup)
- 250 g rice quinoa penne pasta (or any pasta that suits)
Topping
- 1 clove/s garlic
- 500 g natural, Greek or coconut yoghurt - or greek yoghurt (2 cups)
- 2 tbsp hulled tahiniย
- 1 egg/s
- 1 tsp sea salt
- ground black pepper
- 25 g parmesan cheese - grated (ยผ cup)
- 2 tbsp pinenuts
- ยผ bunch/s fresh parsley leaves - approx. 1 handful, finely chopped
Instructions
- Heat the olive oil over a medium heat and add the onion. Sautรฉ for a couple of minutes.
- Add the garlic and lamb mince, sautรฉ to brown the mince.
- Add the cinnamon, mixed spice, bay leaf and oregano and cook for a minute until you smell their fragrance.
- Turn the heat up to high and add the red wine (it should sizzle and reduce quickly and remove the alcohol).
- Reduce the heat and add the tomato passata, broth, zucchini, carrots and seasoning.
- Cover and simmer with the lid ajar for 15-20 minutes.
- Pre-heat you oven to 180ยฐC/ 350ยฐF fan-forced.
- While the sauce is simmering, boil the penne.
- Once it is almost cooked, drain and rinse the pasta and mix in with the sauce and the baby spinach.
- Place into an oven proof serving dish.
- In a food processor or by hand, grate cheese and set aside.
- Then blend the garlic, yoghurt, tahini, sea salt, pepper and egg on a low speed to just combine.
- Pour this over the sauce/ pasta mix, top with the grated parmesan and pine nuts.
- Bake for 10-15 mins or until the cheese is melted and the top is browned.
Serve
- Sprinkle with the chopped parsley leaves and serve with a green, leafy salad.
Thermomix
- I chop the onion and garlic in the Thermomix but cook it all in a pan. I find it cooks better that way, not as sloppy as cooking in the Thermomix. I then use it to grate the cheese and make the topping sauce.
Store
- Store in an airtight container in the fridge or freezer.
Make ahead
- Re-heat in a low oven until just hot.

Make two cups of this Dairy-free Bechamel Sauce to replace the yoghurt. Replace the Parmesan cheese with a generous sprinkling of nutritional yeast flakes and a little bit of salt.Onion and garlic-free
